Homemade Keropok Lekor stuffed with Cheese.

  • For those who don't know what 'keropok lekor' is, it is best described as hybrid between 'fish sausage' and fish crackers (and some say fish fritters). A well-known specialty of Malaysia, it is often eaten during teatime with sweet hot chili sauce.
    This is my take on the infamous keropok lekor, with cheese filling for that fusion taste.
    INGREDIENTS:
    200g fish (I love to use sardines).
    40g wheat flour.
    50g tapioca flour.
    salt to taste.
    black pepper to taste (optional).
    mozzarella and cheddar cheese, grated.
    water for mixing.
    oil for frying.
    extra flour for kneading dough.
