  • In my small kitchen with just a few essential appliances, I will show you how to cook a full roast dinner. The pork loin, tender from sous vide and finished in an air fryer, pairs beautifully with microwaved and roasted vegetables. Yorkshire puddings, crisped to perfection in the air fryer, round out the feast, proving that great cooking doesn't require a big space.

    Taking Cooking food back to basics.
    1 kilo Pork Loin
    sous vide 7 hrs 64C
    Sear in a pan - roast for 10 - 14 mins
    Roast potatoes
    Par boil 5 mins
    Roast 20 mins
    Apple sauce
    Ingredients
    - Apples: 4-6 medium, peeled, cored, and chopped
    - Sugar: 1-2 tablespoons (adjust based on the sweetness of your apples and preference)
    - Cinnamon: ½ teaspoon (optional)
    - Water: 2 tablespoons
    - Lemon juice: A splash to prevent browning and add a bit of tang
    1 tsp butter
    1 tbsp cornflour/ 1 tbsp water
    Microwave 5 minutes. Stir
    Microwave at 5-minute intervals to have a soft apple.
    Parsnip and carrots
    Microwave 6 mins
    Roast around meat
    Sage and onion stuffing
    Ingredients:
    - 1 large onion, finely chopped
    - 1-2 tablespoons of dried sage (adjust according to your taste)
    - 2 cups of breadcrumbs (plain or seasoned)
    - 1/4 cup of butter
    - 1/2 to 3/4 cup of chicken or vegetable broth (adjust for desired moistness)
    - Salt and pepper to taste
    - Optional: 1 beaten egg (for binding)
    Yorkshire pudding
    Ingredients
    150g All Purpose flour
    4 eggs
    175 ml milk
    25 ml water
    Shortening/beef dripping / veg oil
    Pinch of salt
    Pinch of black pepper - optional
    Gravy
    Gravy granules

      Everybody thinks that - and the batter has to be in the fridge for hours. You have seen it as i made it today - chucked on the side and in a warmed pan - oil in after being warmed. Thank you. Best, Rik

      Only thing I would add is for yorkies, I never have weighed flour etc, was taught to do by volume, ie. Pyrex jug and crack 2 eggs, look at the volume, add milk to the same level and flour to the same level, pinch of salt and pepper, 3 mins tops, whisk it up, pre heat muffin tray with half teaspoon of oil, flip the yorkies 5 mins before finishing and crisp up the bottoms, never failed me yet, even my eldest would burn a salad has mastered it 😂 nice vis as usual Rick 👍

    I watch a lot of cookery vlogs and I can honestly say that your Yorkshires are the best I've ever seen done on any show. The pork is perfection and even I, who never eats meat, would eat it. Apple sauce that's got a proper substance not sloppy and fantastic stuffing. Everything in the plate looks amazing and just shows that you don't need a high tech kitchen with loads of space to produce quality meals. That's Michelin star food without the tiny portions and blobs of jus dabbed on the slate.

    Unless I'm cooking for guests, I don't even bother searing off red meat sous vid. It tastes awesome, I don't care what it look like :) That is one deluxe plate of food, done on small equipment. That is a holiday worthy spread. Good job Rik.

    That's a Christmas meal by today's standards . . .Ironically, growing up here in the states, this was weekday meal my mom would make for family of seven! Almost impossible to find any kind of pork roast with FAT CAP anymore ... or bone in ... Too bad. It was all flavor and I miss it.     I'm a bit weird and don't eat pork, but otherwise I'm following this recipe to the letter with lamb... a boned rolled shoulder...even the applesauce on the side, for something a bit different. I absolutely love Yorkshire pudding, yum!

    That looks wonderful. Roast pork is such a satisfying meat. I have considered the sous vide but got scared away from it from reading too many disaster stories. Maybe I should reconsider? This was my mama’s go to Sunday dinner, with popovers unless I was there to make biscuits. Popovers and Yorkshire Puddings seem to be similar. Well done, Mr. Rik.

    I have never seen this method of cooking the roast in the water first. Gorgeous result.
    My grandmother used to tip the Yorkshire pudding into the roasting dish with the meat and veg. The bottom of it would be soaked in dripping...just lovely :)

    Hi, Rick I regard myself as an above-average cook however I still like to watch the techniques of others always learning new tips going back a bit in my meal preparation, it was always the planning and bringing together all the components to build up a dinner/ meal. I remember vegetables to make them tasty was always challenging to boil roast fry or saute. the thing is you do not get many chefs doing vegetables.

    Oh my! I have got to try this. So excited to see how easy the Yorkshires were in the air fryer oven. So curious to try those things. My Instant Pot has a sous vide function which I will try if I can ever get a real pork loin. Little tenderloin roasts are often mislabeled as Loin, and they are not. But for now I have a tenderloin, which I could cook in the air fryer oven... only takes about 30 minutes or less. Then I could try the rest of the dinner too.
    My Mom's Jordan ancestors were from Widecombe in the Moor, Devon all the way back to at least the 1300s... and my last Jordan great grandparents in England died in Worcester during the Plague in 1637. I have been wanting to make an English meal with things they might have eaten. Looked at a menu from The Old Inn in Widecombe (established 1777)... but don't think I could eat Beef & Dragon Breath casserole... and I don't think they ate pizza back then, so that idea was a bust. lol This seems like a good meal to kinda be an English meal for me (although the Yorkshires are probably the only truly English thing on there).     I grew up on baked dinners, which what we called them in Australia. Only without the Yorkshire Puddings and we didn't pre-cook things. Everything just went straight into the oven. Best of course with a leg of lamb, but any meat that can take a substantial cooking time would do. I haven't done it in years now. I need to buy a new oven first and maybe then I'll give it another try. It was without a doubt my favorite meal.

    Proper grub well cooked as always, nice to see you use the microwave, its a great bit of kit, I par boil my parsnips and carrots with the spuds, and roast them together. its time consuming cooking a good roast, I do one every sunday, well done that man.

    You forgot the golden rule, Don’t open the oven door while cooking the Yorkshires or they’ll deflate, also, does meat have to be rested after sous vide cooking? Great video as always Rick 👍🇬🇧

    Hi Rik, the roast dinner looked scrumptious, there was only one thing that spoilt it for me and that was the mustard. It was all perfect, especially the Yorkshire puddings. I do like the Hysapienta air fryer, i wish i could have one but i have nowhere to put one. If people have a pressure cooker, i've got a cosori and that's got the function on it. I usually watch Graham gets about and he does sous vide recipes on there. As you say Rik it doesn't look very appetizing when it comes out till you brown it off. Well i've just eaten a sandwich, i know which i would have preferred. One thing is you always make cooking look so easy

      Sorry that you feel the need to mock me, I’ve been cooking for 40+ years and I like to keep up with the latest methods, I use my sous vide machine, my air fryer and my vacuum sealer often so quit with the emoji faces and go and pass your opinion to someone else

    Wow! That all looks so good. My electric bill is through the roof now that its getting hot. I really need to start using my microwave and toaster oven a lot more. It takes so much less energy than using a full sized stove and oven and not nearly as hot in the kitchen. My toaster oven came with a rotisserie spit! Does yours? I've lost mine because I never knew how that was supposed to work in a toaster oven but maybe I should dig it out of my kitchen drawer where all my odd gadgets are. I don't have a way to sous vide. I also miss roast root veggies, hot roasted so the sugars come out. I love all these ideas, thank you!

    sous vide is great for me in the instant pot. on the other end of the spectrum Ive been looking to recreate my 1970s school dinner spam fritters. They did something to them that i cant seem to replicate. maybe sneaky msg?

    If you don't have a Sous vid, cook the pork in a slow cooker if you have one, in the same way with just water for 8 hours on low, you will get a similar result, 😊
