Why are some helicopters (the Chinook) painted with a pink color ?

Those markings likely indicate that the aircraft were still in the test phase and/or were prototypes.

Could have also been search and rescue markings.

Those identify those aircraft as training aircraft, defined as having student pilots operating them. The high visibility paint job helps avoid collisions in the densely crowded airspace one finds around military training fields like Fort Rucker or NAS Pensacola.
