    This is how I always do my beef and pork and chicken stews. Even distribution of all goods!

    I'm in the UK as you know and I like you go overboard with the debubbling lol but I have very few seal failures which is a good thing :)

      @@helentolley2755 I'm going to try to be less paranoid about it (probably won't happen though lol). Nothing as frustrating as seal fails after spending time and patience on the whole process!

    I mean this kindly, what is it that you are paranoid about with debubbling? For the first 40 years I canned, I had never even heard of debubbling. I would never admit this in public, but I can 6-700 jars a year and I rarely debubble, just tap on the counter ...

      @@jenniferr2057 I just started canning last year Jennifer and i learnt so much from watching canning tutorials on here which were mostly from the US. In each video debubbling was high-lighted as being very important to eliminate air pockets where bacteria can find a way to grow! I guess it's just stuck in my head now to debubble thoroughly is all. Wow that's alot of canning, i take my hat off to you! Bet your pantry looks beautiful with all those pretty jars 😁

      @TrishasKitchenNI I do love the look of a full pantry! Please know my communication is very well intended and kind. I obviously enjoy your channel or I wouldn't watch it!
      I didn't realize you were so new to canning, and entirely self taught!
      Here is my observation, for what it is worth. You have good instincts - just like going off label on this recipe. Comfort comes with time.
      My understanding is that steam is hotter than water and the air space when pressure canning is steam sterilized. Who knows
      My region still cans every single thing water bath and the older people tease me saying the canning police got to me so I bought the new fangled pressure canner. Lol.

      @jenniferr2057 thank you so much, that means the world to me 😊 yes i like to teach myself new things to keep my mind ticking over. Yes i know alot of people waterbath but to be honest i don't have a big enough pot to waterbath enough to make it worth my while. I either pressure or steam can in my presto. Oh the canning police lol, I've heard alot about that but take no notice as i would only do what i feel is safe and right for me and my family so I'll keep on doing it the safest way i know. I guess they are just looking out for things to be done as they have done it for decades but change does happen! I would never disrespect anyone for their ways of doing this or that so I'll leave that as is lol. Nice chatting with you Jennifer 😁

      @TrishasKitchenNI official canning instructions are being updated all the time - for example the head space for cold pack chicken is increased because there's so much water in breasts now - I've been canning for years but I don't want to waste jars that don't steal nor find out in 2 years its poisonous - its too valued to 'wing it' - I follow the regs - Love your channel - Hope there's an NI community out there !

      @@fullofhope2222 yes, chicken is definitely not the same as it was years ago. I hate how they add water and it's accepted by me and many like me! Yes my wee channel is doing ok, fingers crossed it continues that way 😊
