When To Harvest Onions & How To Cure Them!

  • Harvesting and curing onions is easy and quite satisfying to do. Usually we eat through a good portion of these before they get a chance to even cure! This year the onion harvest was decent overall, the heavier than usual rains led to fungal issues like rust and my foolish planting of tall plants in front of these really stunted their overall potential. I am still quite happy with the total harvest especially considering how many we have already grilled up as spring onions.
    When curing the goal is to allow the necks and roots to dry back so that many protective papers can form allowing you to store your onions for a long time. Shade and airflow are key to good curing, you don’t want to instantly cure them but slowly without much heat which will spoil the flavor!

    Without discouraging you from living your own life, I gotta say that I am really thankful you left grad school and became a gardening educator! You teach me so much, and even though I can’t have a garden right now, I’m taking notes for a year from now when I begin planting! ❤

    This brings back happy childhood memories.. whenever I went to my great uncle’s house I’d immediately go to the garden (after receiving permission) and grab an onion (somehow was always massive) which I then took back happily to be washed and peeled by an adult as I couldn’t use a knife (it was a rule.. to be fair I was like 8) and was too short to reach the sink.. every time they asked if I wanted to share with anyone and I’d just happily say no and start eating it like an apple. Now that I’m looking back they probably were asking if I wanted to share because they were always the biggest ones + I wasn’t the only kid that liked the onions as they always taste better fresh.
    Also all of us kids would wander into the woods to locate the raspberry and boysenberry bushes.. they didn’t really care because they’re not their bushes and are native to this region. The way we’d tell the difference is one of us would pick a red berry from a bush and eat it if it was sweet the berries of the same bush got put in the raspberry cup if it was sour the opposite.. boysenberries are sweet ripe but we like sour fruit too and it was safe to eat unripe

    I braid my long onion necks and then hang them to cure. I also do the same for my garlic

    If you have to harvest early because of weather, "wet" uncured onions make great soup or jam!

    I’ve seen someone else recommended flopping the onion necks over by hand when a good chunk of them are already flopped over…then leave it for another week or so before harvesting

      strong winds in my area did this for me recently. unfortunately they also bent over some of the small ones, and they just don't get back up once they're down

    my grandma used to hang her onions on her upper cabinet handles, and I never knew why. now I'm guessing it was to cure them

    Would setting up in like a shed with a fan be alright you reckon? Feel like only downside would be the humidity... only asking as my house doesn't have much shade outside 😊

      i think they start out fully underground but come further and further out of the ground as they grow.

    I have onions that I left in the ground from last year because they were small and thought I would experiment and see what happened. There's still alive, what should I expect moving forward with them? I don't want them to take up valuable bedspace if they're not going to turn into something good. Do I keep them in the ground or pull them?

      Different times for different zones
      By your name I take it your in south Texas
      Onions are a summer/fall crop mostly
      I’m in 7A (Moore,Oklahoma)
      And I plant mine in June and harvest in august early September
      Now if I wanted a extra harvest I could have planted in late April early may but most importantly it depends on your weather
      You want to make sure your past your last freeze date
      Onions love love love heat and it actually makes for a more flavorful onion ..

      I’m on the central Oregon coast.. sort of 🤔 inland just enough to get some good warm weather from now until mid September or so with a few showers thrown in there about. Is it too late for me to plant onions? I would love to have some that last thru the winter. But if it’s too late for that, will I still be able to have them grow enough to eat right away? Or is it too late?

      Yes I'm in South Texas. Corpus Christi area. Zone 9. Thank you for all the comments..It has been so hot here that my onions that I have planted are dying, so I have moved them to containers into the shade..they're doing a lot better. I also use soil that's made for Palm trees. The soil's loose, and they're growing like weeds along with my garlic. I have sandy loam soil here when it dries out, it's hard as a rock.

      Yes! If you want to use the greens just cut the individual leaves down to where they meet the stem. Don't cut into the stem, though.

    What does it mean when they flower on the end of the neck?

      It means the onion has reached the end of its growth cycle and is ready to produce flowers and seeds. When this happens the plant funnels all its energy from the bulb into the flowers, and the bulb can actually decrease in size. you can either harvest it then, let it go to seed for next year, or remove the flower stem and try to get some more growth out of the bulb/plant, though i've found that they don't usually last much longer after that
