You were right to pass on the Long Tom. I was surprised that it was kept because, as far as I know, it's not a very good eater. They are reef hunters the bigger they get, the more likely the chance of ciguatera. Aside from that, Nicaragua looks bomb. I am a coffee lover so I ordered some of Elton's, It got here quickly and smelled so good and fresh. Yum!

You should bring a Ciguatera test kit with you. I've also heard that about Ciguatera and flies. But I was also told that most reef and predatory fish have some level of cig, but higher in some areas. And that it's cumulative in the human body, so once you hit a certain amount of consumption, you get the poisoning effects. Don't know if that's true, but it's what I've heard. University of Hawaii is doing some pretty extensive research on it though, which is promising.
Accumulating in people makes some sense because I have friends in Niue that ate a big GT and some of his family members got cig and others didn’t by eating the same fish. So maybe that has some truth to it

You should have grabbed a carrot and red onion for the cabbage. Make coleslaw with some mayonnaise and vinegar,salt and pepper. Add a little pineapple in there too. Bbq smoke pits do that around here. Very delicious. But iam sure you have delicious idea

I've seen a lot of needle fish. I have never seen one that big! Thats four times bigger than the biggest one I've seen. I've heard it called "poor man's marlin".
The guides in mexico and central america always want to fish for you then hand it you to retrieve. I got into a fight with a deck hand in mexico because he wouldn't let me fish on my own. Then this guy loses your fish because they don't have a gaff? that's not cool. but they are dinks for Dorado.
Ciguatera is not common anywere. Stop eating fish if you think it's common. The Bigger the fish, the more likelly. But also the ones with the highest Mercury and heavy metals. Guess Sardines are the healthiest because of their short lifespan. 50% of all fish are caught near coral reefs, so they are not the issue. Parrot fish only eat coral and they don't have ciguatera. I'd look more at locallized red tides or misshandling, than big fish that feed on coral dwellers. All small coral dwellers are human food. Fishermen sell the bigger ones and keep the small ones for themselves. Back in the day, it was said to place a silver coin( Many countrys had silver coins as regular small curency) in the fish flesh and it would turn black if the fish was sick. Take a mask and look over a coral reef, every fish you see is eatable. So which of those will poison a Cuda or whatever. If anyone mentions there are no more silver coins, most anyone on the beach has some silver jevelry on them

When coffee is roasted carbon dioxide forms inside the bean. The gas is contained within the bean, but leaches out over time, until the roasted coffee finally goes stale. This degassing process happens naturally, by itself, as soon as the beans have completed roasting. But it takes some time for most of the CO2 to fully vacate the beans, and so, assuming your coffee is relatively fresh-less than a week or two old-there'll still be some CO2 left to expel when brewed. As soon as the hot water contacts the ground coffee, that stored carbon dioxide rushes out in a degassing frenzy. You can witness the event in real time. In a pour-over drip cone: the coffee grounds foam and enlarge, swelling and bubbling until they eventually calm down, after about 30 seconds to a minute. In a French press, the grounds will form a foamy raft on the surface of the hot water and then just float there, held up by the gas, until you mix them back down into the drink. Since the beans degas on their own even in their storage bag, the older the beans get, the less CO2 they will contain, making the bloom a less dramatic event. (This is one way to tell how old beans may be: If they don't degas much, they're old.) This is why high quality coffee is sold in bags with vent buttons on them, while low quality coffee is sold in vaccum-sealed containers (folgers, bustelo).
