If you go into the Snapchat settings you can set it globally and just do it once. Alternatively, you can do it on each post / story if you prefer to adjust based on that. So you can do it either way.

You have to change it to custom and block whoever BEFORE you post the story. If you post the story and then block them after they can still see it.
