    This one is for all the seafood lovers out there. Please give it a thumbs up if you enjoyed it. What we like about seafood in Italy is that the flavors are clean and delicate whereas sometimes seafood (shellfish in particular) can be very pungent and briny.

    Brandacujun literally means "who breaks the testicles", due to the work necessary to make the stockfish soft by holding the mortar between the legs, generally of sailors on board boats, in a sitting position

    My stepfather, Hans V. Martini, was born in Camogli, and died there at an old age. Any information is appreciated!!!!

      @@happygoluckytravel Hi Emre, Christi and I have always loved the Italian lakes in mid September. My favorite location is Bellagio on Lake Como. We have enjoyed hiking and strolling through beautiful gardens, visiting historic villas with wonderful views and exploring the many small villages along the lake. Your transportation between locations will be by ferry boat. You will not need a car.
      If you want to splurge and spoil your lovely wife, I can highly recommend two hotels for traditional Italian hospitality, Villa Serbelloni in Bellagio and Villa d' Este in Cernobio. If traveling with friends I would highly recommend booking one of the Villas at Villa d' Este which are truly amazing! You will not want to leave until you're penny less. :)
      Have you been to Sicily? We haven't but it looks beautiful. We are taking a tour with Tauck to get a good overview of the island in September. I will let you know how it was after we return. Cheers, Brian

    The very nice chef forgot to mention the ROMAN artichoke! 😡😁😁😁
    But we all know Italy has a regional if not town specific variety of almost everithing..
    Roman artichokes are best fried (carciofi alla giudìa) or stewed.

    The brandacujun is not an exotic dish, it comes from Liguria just like the panissa! It is a delicious appetizer based on stockfish creamed with potatoes, soft and aromatic, to be enjoyed spread on toasted bread. An ancient recipe whose consistency and procedure recalls other regional dishes based on cod, such as the famous Venetian-style creamed cod. It seems that this preparation was in vogue among sailors: there was never a shortage of stockfish and potatoes on ships, practical foods to preserve and cook during long sea crossings. There are various explanations for the singular name Brandacujun, the least "mischievous" concerns the traditional gesture of repeatedly rotating (i.e. brandishing) during cooking. By doing this, the potatoes and stockfish fall apart and mix together, obtaining a perfect creaming. The result is in fact a creamy and enveloping dish with rustic but timeless flavours! Start with already soaked stockfish, so as to skip the longest phase!
