If you use the groovitron or Mag-net cannon to stop the grunthors attacking you, you can push them back into the water, they'll glitch the hell out and die dozens of times in seconds releasing dozens of leviathan souls before disappearing, sometimes it won't even properly register them as dead, so if you die and respawn you can go back to that grunthor and it'll appear as normal, it's the fastest way to get bolts on normal or challenge mode.
