Vibration involves the periodic stretching and compressing of the bond between the two atoms. This motion is along the bond axis (not independent of the translational or rotational motion). Since a diatomic molecule has only one bond, it can only vibrate in one way, which is the stretching/compressing along that bond. Even though the molecule can exist in three-dimensional space (x, y, z), the vibration is internal and occurs along the bond axis only. Hence, there's just 1 vibrational degree of freedom. This vibration is always treated separately from translational and rotational motion because it refers to the internal bond movement, not the movement of the whole molecule in space.
