Thanks for the history lesson, very cool. I live in NJ where we have AMAZING bagels, Syrian Jewish bagels. But no Bialys ☹️ where I live in Ocean County. I would love to try one.
I used to go in there when I lived on he Lower East Side in the 1960s when my rent was $60 a month. For very little money, you could buy a bag of bagels or bialys, still warm from the oven. On Rivington Street there was a matzah bakery which would give you a bag of broken matzahs for free, also warm from the oven. I used to go in there and get a bag of whole wheat matzahs, much fresher and tastier than anything you could buy in a store. Now, living in Vermont, bialys are almost an extinct species, although the Putney Coop and Walker's farm stand in Dummerston used to have them on Fridays, baked by a local guy. I think I am going to start learning to bake them myself.
I went to school in Bialystok in the late '80s. Now I live in Chicago and will be in NYC this coming June. Can't wait to stop by Kossar's and get a mouthful of bialys for breakfast!!
Depending on where you're at in Chicago, you can go up and down Devon Avenue area east of McCormick and at least when I lived in the area there were quite a few Bagel shops that also had Bialys. I live in FL now but it's been a while since I've been back. give it a shot if you're in the area.
@@scottym3 I'm 2 blocks off of Devon so I know it well. There is actually a great little place near me called New York Bagel & Bialy on Touhy and Cicero in Lincolnwood. Haven't been there since the damn COVID lockdown, but before, this place was always packed full of customers and amazing food.

I just looked up Kossar's. A fucking 15 dollars for a single bialy!? Even in Manhattan, this is a total rip-off. And I know, because I have lived there! Highway robbery.

They're delicious. Used to have a buttered one every day on my coffee break. Retired in Texas and can't get 'em here.
