You continue to make me smile! I like the modular approach you take. Create separate solutions, and iterate. Leaving the units 'separate', but you could "float a floor" for a continuous counter top. Or pore a cement top. Layer as needed! Design it to be able to be modified or replaced. Stay groovy kiddo! Kiss Snoopy for me...
If you're settleing down a bit, you can start your vegetable garden. Lots of energy from working with that and lots of rewards. I hope you don't have the Spanish slugs that eats everything green.
If you find some wood - even from pallets - you can plain them down and glue the together to make a tabletop. I did that for my outdoor kitchen. You may be able to borrow the tools for it. Add some oil to it and will look great.
Oh yeah, and get some solar panels and batteries so you're off the grid - at least in spring/summer/fall.

Where is your Van? While you were in Spain, I didn't see our favorite abandoned house near the watermelon patch! I love that house! If I were 50 years younger. I'd buy that property for you and restore the house! Im a trained cabinet maker, but my skills were in all the building trades! But alas im slmost 89yo now and can only dream now!
