I also made a powdered sugar glaze for the top, and the whole loaf baked for 55°F in my oven. I would definitely add less sugar in mine next time.
I used to believe that by rolling raisins in flour it would stop them from sinking but it doesn’t at all The only secret for raisins not to sink to the bottom of the cake is the quantity of flour The more liquid the dough is the more your raisins will sink to the bottom This is why in this recipe they’re putting them on top, I’ve never tried that So far my best recipe for raisins cake is 500 g flour 300 g of sugar 250 g of butter Six eggs 300 g of raisins Tablespoon vanilla if liquid or powdered Tablespoon rum Lemon zest optional Baking powder With these quantities of flour and fat, raisins will not sink because dough will be thick not runny

Made the cake and baked in a cake tin for 30 mins. Cake was OK but I felt it lacked moisture. Raisins remained at the top. Next time I'll coat it with flour and mix in.
I tried the recipe, taste is really superb. Only thing is that the cake in the middle where the crack starts looks a little moist, how then will it not be moist in the middle? The rest of the cake is perfectly fine.
Could you do a video explaining how to make sponge fingers as I want to start making them as they’re perfect size to give my son every so often as he’s only 1 and as I wouldn’t need much to make a couple it’s an ideal treat once a week to make as I could make a couple different ones healthy ones but I’ve no idea how to get the shape which is where I’m stuck

If a cake cracks in the middle it's due to high temperature/opening oven too soon.

In a pound cake , if it cracks on top it is a sign that a cake has baked perfectly.
If it has no cracks thn the cake must be too dense inside ..
How come 200gms sugar is equivalent to 1 cup and 250gms flour is equivalent to 2 cups? Measurement of ingredients is very important in baking.
