  • These fajitas were smashing!!!!! The flavors were out of bounds!! Remember to season your proteins well, there's nothing worse than under seasoned meat!
    I used the fajita seasoning blend on every component of this dinner to carry those great flavors throughout. This is a great Saturday or Sunday night dinner to include your family or guests to help out and sip on margaritas while you prepare and cook.
    The key to tender skirt steaks and flank steaks is that you season well and let sit at least two hours but overnight is best and make sure to cut against the grain for serving!
    *Here's what you need for the garlic paste used throughout the recipe:
    8 garlic cloves minced
    salt as an abrasive to work the garlic to a paste
    **Here's what you need to make my fajita seasoning blend used throughout the recipe:
    2tbsp ground cumin
    2tsp chili powder
    2tbsp onion powder
    3tsp coriander
    2tbsp smoked paprika
    3tsp Mexican Oregano
    salt and pepper to taste
    For the steaks in this recipe you'll need two skirt steaks (I used one skirt and one flank for comparison sake)
    1 yellow onion or sweet onion sliced into moon shapes
    14 mini sweet peppers (of course you can substitute with 3 to 4 regular size bell peppers) roughly julienned
    *half of the garlic paste made
    **7tbsp of the fajita seasoning blend
    Juice of one lime
    Salt and pepper to taste
    For the Green Salsa:
    5 tomatillos
    1/4 cup oil cold water
    1/3 of a yellow or sweet onion diced
    1/3 of a bunch of cilantro
    one and quarter of remaining *garlic paste
    1tsp of **fajita seasoning blend
    juice of half a lime (that I totally forgot to add!)
    salt and pepper to taste
    For the Tomato Salsa:
    6 Roma Tomatoes quartered
    2 mini sweet peppers
    1/3 of the yellow or sweet onion diced
    one and quarter of the *garlic paste
    1/3 of a bunch of cilantro
    1tsp of **fajita seasoning blend
    juice of half a lime
    For the Guacamole:
    3 avocados
    2 red mini sweet peppers
    half a shallot finely diced
    1/3 of yellow or sweet onion diced
    one and quarter of the *garlic paste
    1tsp of **fajita seasoning blend
    1/3 of a bunch of cilantro
    juice of half a lime
    salt and pepper to taste
