You can use EI core transformers also . If you are worried about the magnetic field interference then you can shield the transformers with a metal sheet

This type of transformer you mentioned, EI core, is the most common around here. That's why I've been reading and watching a lot about good circuit power supply designs.

When solving problems I always resorted to the literature (where I learned about multiplier factor capacitors). I've been reading the Audio Power Amplifier Design Handbook by Douglas Self.
