When texturing with stuff like the andesite slabs, you can put them in your offhand and keep the pick in your main hand, so that you don't need to keep switching and finding them in your hotbar (somebody might have mentioned it later in the video)
1:45:50 isn't the fact that you fall down on the way back more than on the way forward to do with the way the stairs are placed? On the way forward you are going sorta downwards so that makes it easier to make that jump
Couple ideas: What if the honey had tricky patches? Like, right when they are convinced to go the side route, there's a clear patch for running for 5-6 blocks, then a couple clumps of honey, then full honey to convince them to move routes. Since signs in the tunnels aren't for the passengers, right? Couldn't they instead be track signal change info? Details only important to the drivers since they aren't really readable to passengers... Perhaps change out one or two of the frog lights on the tunnel signs into purpur blocks to represent that they have burned out. Also, red, yellow, and green glass or panes could represent signals for when there is train traffic ahead and trains have to be held between stations until it clears. That happens every day on most routes. It could help impede going over the train or difficulty going along sides. Nametag a couple of endermites to represent the rats. Make it so they can be seen but not reach the players. The noise and sight of them would heighten the ambiance. NYC often has rats running along the tracks and the platforms. Even in the "nice" areas.
For me, weekends tend to be errands, chores, cooking, and family events. I start looking for Hermitcraft videos on Monday, and then queue them up and watch them all week during lunch or in the evenings. Enjoying all the content, thank you!

For some of the signs on the train, you could use the street names. As in, "next stop 1st St." You and Bdubs started naming a few streets and could carry that in the metro tunnel.
Prob won’t see this comment but above the headlights, instead of deepslate walls you could use mangrove half slabs or trapdoors. I feel like it would add definition to the front instead of the repetitive walls.
If I am ever behind on UA-cam water later I use the weekends to catch up but I tend to try and watch the vid the day it was released. I also love the progress you’ve made of the obstacle course under the city! It’s looking awesome!
with all the blockers in the carts, are you sure it wouldnt just be faster to... run over the honey blocks? also with depending on when everyone starts the race, the pistons might just be completely closed or open, so how about you change the time ticker to move like each 5 seconds. that way the chance of the runners hitting their head would also increase
You could have a carriage laying on its side to the side of the track, with rubble coming in blocking any way except through the sideways carriage or making the jump onto it from the roof before. You could also have a carriage which somebody has taken shelter in, with a camp fire, sleeping back, and a boarded up far door (signs across with wood planks in the doorway behind).
You need to add signs that say, "No running on train platform."
