  • How to Make Homemade Chocolate Ice Cream with the Cuisinart Ice Cream Maker. This ice cream is creamy with lots of chocolate flavor. I have the Cuisinart ICE-30 or ICE-30BC ice cream maker. This also works great in the Cuisinart ICE-70, the Cuisinart ICE-21, or the Cuisinart ICE-100. If you have a compressor ice cream maker, you can make batch after batch without freezing the bowl.

    I've actually dumped everything into my Vitamix from cold and let it run until hot. Eggs came up to the same temperature as everything else and it still was thick and creamy. Threw the chocolate in towards the end.

    I have the same Ice Cream maker as you! I have not tried making the custard versions, but you made it look so simple. I think tomorrow when I go to my storage unit, I will be finding it and bringing it back.

    what I would do is use baking chocolate, and put in another full cup of whip cream before putting in the fridge. I have the Kitchenaid ice cream maker, and it just lives in my freezer. Great idea.

      I've only used it once, and I burned the milk. The ice cream looked good, but it tasted horrible. I need to be able to see what I'm stirring better. I'm in a wheelchair, and sometimes that can be hard. But I taped your ice cream video, so I have your recipe, and I'm going to try it that way instead. I bet it tastes great!! Cook on.

    I have the same ice cream maker and also read you should pour custard in when it is spinning as you did. I just don't remember pouring it in with the clear lid on. Can you remove the lid and just pour in the mix and then replace the lid? I had a craving for ice cream and haven't had any in a long while so went downstairs to put the bowl in the freezer overnight and will make this recipe in the morning. Maybe tomorrow I can see if machine will still spin with the lid off. It makes more sense not having to aim for the small opening. I think I turn on machine, pour in custard mix, add paddle and lid back on.
    Why did you mess up another utensil to scoop out some for your hubby? Just use the spatula that you use next to scrape to put some in a bowl. It is not hard enough yet to need an ice cream scoop. Sure looks tasty though.
    Another thing I do is use a sugar substitute (Xylitol) that is the same consistency as sugar but no calories.

    I have the same machine. I put the custard in the frozen container THEN put it in the machine… add the paddle
    And put the lid on. No mess

    where did you get your stainless pot? can we use fresh, unpasteurized cow milk? what is the camera you used. Picture is so clear and crisp. I can hardly wait to try this. Just got one of the ice creme makers for $1 at yard sale. Still new!

    I think the compressor version is worth it..after overnight cooling, this would still require some more freezing to harden the ice cream...too much of waiting..

      I like the idea of the compressor style because then I don't have to worry the bowl isn't frozen enough (in which case the mix will be runny and not thicken). Personally, I don't like the ice cream as much after freezing it. I like fresh the best (even if it is a bit soft). I haven't made the custard version, though, which I assume might be softer.

    I just tried making ice cream in the same machine. I didn't chill the mixture before pouring it in. So I'm left with an ice cream soup.... But the flavor is delicious.

    not sure why all the hate on guar gum. it's made from legumes called guar beans. its a plant. why would it be unsafe? the outer husks of the beans are removed, and the central, starchy endosperm is collected, dried, and ground into a powder. It's low in calories and high in soluble fiber, making it a good thickener and stabilizer so your ice cream doesnt end up a giant piece of ice the next day in the freezer.

    hi amy, I have tried to make chocolate ice cream, unfortunately it is frozen too quickly that cannot form ice cream 😥.
    I use cheap ice cream machine. Ingredient is whipping cream and chocolate powder.

      Pure vanilla should be the same. As long as it is made from vanilla beans and alcohol. Just don't just imitation and you should be fine. Thanks for watching!

      @@AmyLearnsToCook It's so much fun to experiment with new flavors. I haven't made ice cream in a long time, because one in my family is dairy free (at least cow dairy) and some can't have sugars....so trying to figure out how to accommodate everyone. I am wanting to try one of the diabetic friendly sugars, and for my dairy free niece we can use Cocowhip instead of cream (coconut based, but thickens like cream).

    If it's milk is it really ice cream? Fun fact dairy queen (at least in canada) doesn't technically make icecream the liquid that goes in the machines are called "dairy queen frozen dairy mix" because there's no cream at all and they legally can't advertise it as such.

      The ice cream I first made from the Cuisinart recipe book had no egg. This is more of a custard style. The recipe I followed uses one cup of milk and two cups of cream, and has no egg.

      To make a deep, dark chocolaty ice cream, I use cocoa powder. My family actually criticized my method with the real chocolate pieced; they said it wasn't smooth enough. I liked it -- so rich and good -- but I guess there were some little bits that didn't fully melt. I followed a recipe out of the Cuisinart book when I made it the first time, and that recipe said to use chocolate chips or bits. I think the chocolate sauce might make it runny (not based on my experience, though, since I haven't tried that). Using the baker's cocoa is how I achieved a super dark, rich ice cream that my sister and I absolutely loved. Milk chocolate is too sweet for most of my family members; we want a deeper chocolate taste. If you cut down the sugar and increase the chocolate you can achieve this. I don't like store bought chocolate ice cream because it isn't chocolaty enough.

      You need more fat or it'll be icy. Coconut milk makes a good dairy-free ice cream base.

      @@TheLaurenKat My niece made ice cream with something called Cocowhip , which is coconut based. She combined it with Cashew milk. It made wonderful ice cream. I'm sure you could use coconut milk, but she knows I am not super fond of the coconut flavor, so she used a different dairy free milk. When trying to cut saturated fat, I used Cocowhip to make chocolate mousse, and it thickens up just like dairy whipping cream.

    After using the Cuisinart Ice Cream Maker, I put the end result in an air tight container in the freezer for a few hours , and it formed ice crystals. Do you know how to prevent the formation of ice crystals?

      I'd say the fat content of your ice cream was too low. Or maybe you didn't leave it long enough in the ice cream maker ou didn't chill the mixture before.

      @@000euMJ A hint that really works for me: You put a piece of plastic wrap over the top of the ice cream, under the lid. No crystals, when I used that hint.

      Home ice cream machines only make soft serve consistency as I said in the video. You have to freeze it to make it scoopable.

      R.L Lynch the chocolate she used was bittersweet chocolate. Your comment about it being too much sugar is off base. Only one half cup to sweeten the milk AND the chocolate would leave the finished product not sweet at all.
