Convection self cleaning oven . Easy .

1c warm (107f) water
1tb (10g) active dry yeast
2 tb (12 g) sugar
Sit for 15 minutes
Separate bowl -
3.5 cups (420g) AP flour
2 tsp (11g) salt
2 tb (12 g) sugar
Stir
Separate bowl -
1 whole egg
1 egg yolk
Whisk and add to flour
Stream in yeast mixture on low speed
1/4 c (half stick) unsalted butter cubed and softened
Kneed 10 minutes (low speed)
Grease bowl
Proof in oven with light on 1-1.5 hours
Punch down
Flour work surface and divide into 10 equal buns
Proof again 45-60 minutes
Brush with egg wash
Sesame seeds on top
Bake at 375 for 12-14 minutes

These brioche burger buns are INSANELY good. Its so easy to make and so delicious. Made these several times already and its my go to receipe. I divide mine into 6 buns because I like a big bun when i make portabella mushroom burgers. They seem to take a long time to rise in the oven. Mine usually take around 2-2 1/2 hours to rise. Any buns i dont use i just freeze. When im ready to use I just let it thaw out on the counter. I have also wrapped them in foil and stuck them in the oven at 350 for about 10-15 mins. Comes out perfect.

May I ask do you really have to put it in the "cold oven" ? That just means the oven isn't even on, right? Why does it have to proof in there as opposed to on the counter or in a cupboard or something? I have always been confused by that part, unless cold oven means it's at a super, super low temperature.
It just means oven is not turned on or was not turned on sometime ago making it a warm oven. You can obviously proof the dough in any place. The point is to keep the dough in a place warm enough to rise at a decent rate, yet cool enough to develop flavor, somewhere above 70F and lower than 90F. So the oven with the light on kinda replicates a similar temperature.
