Wacky Cake is my husband's family standard, and has been for 80 or more years. The only thing different is that instead of water, a cup of coffee is used.
Coffee makes it better. My Nana made cake with strong coffee and also made frosting with it. So delicious
Yes, coffee gives it a deeper flavor!
@@michaelad48 I never thought about coffee in the icing! Will do it!
Ooohhh...
Years ago, Marlboro put out cookbooks, and their version used coffee. And coffee marinated steak.
This brings back memories of my childhood ( I am 67) when my Great-aunt Ruth would make this for my three siblings and me. She was our caretaker during weekdays while my single mom worked outside the home. Every Friday she would bake something special for us since we wouldn’t see her again until Monday morning. I loved her baked egg custard made in the little ceramic dishes that came inside boxes of washing powder ( yes, there was such a thing), her chewy vinegar cookies, and her Wacky Cake. Thank you for the reminder of my beloved Aunt Ruth!
She obviously ADORED and loved you dearly. So sweet! 🌸 Thanks for sharing this beautiful memory.
@@maryannford7665 yes, she did! She was my grandmother’s sister but in our hearts Aunt Ruth was our grandmother :-)
I learned to make this "Depression Cake" in Jr High school cooking class in the early 70's and have made it many times over the years. It's tasty as-is but you can elevate the recipe- use dutch process cocoa, substitute coffee for the water and throw in a handful of chocolate chips.
These depression recipes will come in handy real soon when eggs cost a dollar each. The other day America's Test Kitchen was teaching how to cook squirrels.

Great idea!
My mom had this recipe written on the back cover of an old cookbook and it was probably the first thing I learned to bake as a kid 💜
What a lovely memory! 🌸
It is the absolute best chocolate cake I make, and I've been making it for more than 60 years and have taught it to children, grandchildren and friends. It came from the depression years when butter, milk, and eggs were difficult to come by. I always double the recipe, however, since a small one is not quite enough. It is incredible warm out of the oven and doesn't even need frosting and stays moist and delicious for several days. And when I do frost it, we prefer dark chocolate frosting. When I made it a few days ago, I also made a white cake batter (simple cake mix) and alternated scoops of chocolate and vanilla batter into cupcake papers for beautiful and deliciously moist marble cupcakes. Try it!
I have a similar recipe that my grandmother sent to my mom back in the 60s. It was titled "Eggless, Milkless, Butterless Cake". It's a versatile single layer cake that comes out moist with fine crumb. It's vegan, and if you use an alternate flour, also gluten-free!
That's to cool. I've never heard of it. Thanks ATK for teaching me something new. Love watching y'all on PBS.
My Mom would make this for me over 60 years ago it’s nice to see being brought back for more generations, Thank you
This little cake is actually so tasty. We love it with Trader Joe's delicious vanilla icecream. To take it up a notch, try pouring ganache over while the cake is cooled, but still in the pan, let the ganache set up, and serve it from the pan.
This was our family family's favorite cake. Mom received the recipe in the late 60's early 70's. We didn't use the powdered sugar though. We would grate up one of those giant Hershey bars and sprinkle the chocolate over the cake fresh out of the oven. It would melt then re harden for a great topping. Oh the memories. 😋👍
I had a recipe like that from Home Economics 50+ years ago. I plan to make one now.
Oh the memories this recipe/cake brings to mind. Mama made this and then I made it for my family.
A favorite from long ago. Glad you posted.
I’ve never seen such a thing, but now I have to try it! Looks fun!
Never heard of it before but I’m definitely making it! Sounds fun, easy and looks delicious.
This has been my family's favorite chocolate cake since the late 60's or early 70's. Myself and my sisters still use this recipe regularly. Though we don't mix it up the way you did.
Woohoo, Ashley’s back!
This looks great!
Oh the wonderful memories this brought me! My Mamaw Cook made this cake for all occasions. However she made a very thick peanut butter frosting for her cake. YUM!
peanut butter frosting would be good.
Its wacky ! Its wacky ! Its the perfect egg-free snacky !
Been making this "Cockeyed Cake" for decades, ever since I found the recipe in Peg Braken's "I Hate to Cook Book".
My family has baked The Cockeyed cake from the I Hate To Cook Book as long as I can remember (at least the 1970s, perhaps earlier).
Never heard of Wacky Cake, but it seems a totally appropriate name.
Thank you Ashley!!!1
Thanks!
now that looks really good.
this was our favorite cake growing up and it still is.
How the hell did you guys get into my grandmother's recipe box?!?!
Grew up in the 60s/70s. Love this cake. Double the cocoa. Dad liked it warm in a bowl with milk. We had a dairy farm. Anyway, a few years ago I cut the recipe in half (8x8 or 9x9)eliminated the vinegar and oil and instead used a 6 ounce cup of orange yogurt, zest of an orange and 1T orange juice. If you like orange and chocolate, yum. Eliminate the Coco and do the yogurt trick with a lemon. Yum!
Heard about this on Epic Economist '15 Great Depression Foods We Will All Be Eating Again Soon'. Had to look it up 'cause I live off grid and comfy.
The Baking Soda and Vinegar mix do make a good substitute for eggs whenever we're short of them.
Perfect recipe for people who can't cook or bake.
Genuis !!!
Are you supposed to grease the pan to prevent sticking?
I finally made the Wacky Cake and it is pretty good. Really I was surprised because I never had luck with “dump cake “ and thought this would be another fail. I did spray the pan but the next time I will try it without spray.
I make wonky cakes all the time.....oh...you said Wacky!
I did this a couple of times long ago, but didn’t mix it in the pan.
We used to call this camping cake... mom would make it in cast iron covered skilled over low coals...
We call it goofy cake in my family. It is the favorite cake for birthdays and special occasions.
I like.
It’s a staple at our schools on Wednesdays. They are famous for it …but.
You don’t need to mix it in the pan and it looks much darker and white icing. I thought it was whacky as a kid because white icing on black cake. Learned a lot since then. I hear they sell full sheets of it still.
Wow! I’m from Texas, where we had what else Texas sheet cake. What state did you go to school?
I have been baking this cake for more than 45 years and now have perfected it Gluten Free! My favorite go to Chocolate Cake ( I do tweak the recipe a bit though😆)
Ask Adam what is the best food vacuum system to store food.
My mother used to make this cake a lot when I was young I'm 71 now
In this video, they make it in the baking dish. Did they grease the baking dish before they added all of the ingredients? The recipe on the website says to grease the baking dish, but I don't see any grease on her baking dish in this video.
We made this growing up. It came from Grandma C.
We used to call that a Dump Cake. We would put EVERYTHING in it that was sweet or nutty!
What's wacky is people thinking that eggs and dairy need to be part of all baked goods.
Is there a Vanilla version?
What is the purpose of leaving a few streaks of flour remain b4 you bake it??
So is like a brownie? I was hoping she would cut it open
It tastes amazing with ermine frosting
I never heard of wacky cakes, but it looks like a brownie cake.
My little girl is allergic to egg and this is an easy recipe for her to be able to enjoy cake! Thanks! 😁
Our Grade 8 Home Ec teacher taught this to us over 40 years ago. Super easy and moist, but it's rather bland tasting compared to proper chocolate cake.
Hi
Why is it mixed in a pan rather than mixing bowl? Wouldn’t it be better to mix it in a mixing bowl then pour into cake pan?
My guess would be the minimal handling of the batter mix and saving on dishwashing. This recipe is austere. But even this one would be impossible to make at home in the old USSR. Definitely, there would not be either flour or sugar. Or the cacao powder. I remember making eclair for the first time - that was all that was accessible. Flour, butter, water, salt.
Can I use a pot to bake it?
This is a Depression recipe
I would have to sub vegitable oil with melted butter and instead of water use coffee
OMG YESSSSSSS PLEASE LOOKS SOOOOOOO DELISH
❤️🔥❤️🔥❤️🔥❤️🔥❤️🔥❤️🔥❤️🔥❤️🔥
How does it taste???
it tastes like the chocolate cake that used to be served in school cafeteria lunches in the 60's. It's good! Not gourmet but moist and chocolately, very tasty considering there is no butter or egg.
I used to make this but put three whole good quality chocolate bars on the top when it was finished. The chocolate melted and then you spread it over the cake.
Interesting there's no mention that this cake is from the old wartime days, when butter and eggs were in short supply. It's a very old recipe and very good.
Why not give the measurements?
Would have been nice to have the actual amounts, but I'm sure that's in the written recipe. My mom used to make wacky cake. Can't believe vinegar works so well for it.
There's a link in the description with the recipe
1 ½ cups (7½ ounces) all-purpose flour
¾ cup (5¼ ounces) sugar
¼ cup (¾ ounce) natural cocoa powder
¾ teaspoon baking soda
½ teaspoon table salt
5 tablespoons vegetable oil
1 tablespoon distilled white vinegar
1 teaspoon vanilla extract
1 cup water
Confectioners' sugar
We use to call it a dump cake
A dump cake is cake mix dumped over canned or frozen fruit, drizzled with melted butter and baked. No eggs or oil either but not really the same as this cake.
It’s basically just a vegan cake that’s mixed in the same container it’s baked in. How did it get named “wacky?”
I know this wqs meant to be short, but it would have been helpful to include any sort of information about flavor or texture, or any reason why you'd would or wouldn't make this over a "normal" cake. I could make an omelet with oil instead of eggs and butter...but there are likely good reasons not to. ;)
The history of this cake is that it was popular in the depression when eggs and butter were in short supply. It's not a gourmet cake, it's a humble little sweet that can easily be made with items most people have on hand and it costs very little to make. In my opinion, the flavor and texture are very good considering the lack of butter and eggs.
Chocolate and MOIST! Soooo good!
You know, it isn't so wrong to use Water instead of Milk.
No so Wacky after all! 2nd time viewing this.
Do you really need the craters? Couldn't you just mix all the liquids with the water?
No craters required.
Rebel
@@sandrah7512 Sorry, but I don't buy that explanation. The last minute mix would actually be more effective adding the liquids to the water. The crater method has the vinegar sitting on the dry soda and already reacting while waiting for you to add the water and mix. Using your theory, the crater method would actually be less effective.
Try it both ways and decide which way you and your family prefer it.
I prefer to mix it in a mixer and transfer to the pan. I think the trick is, don’t over mix.
Why didn't she give. Measurements geeezzz
at a buffet, i personally sneak corndogs into the buffet so others can enjoy them. I hide 6 corndogs in my jacket pockets. it then, is a joy for me to see other patrons of the establishment eat my corndogs thinking they were part of the buffet.
Seriously. Eeewwwwwe how do they know what gross things are in your pockets. Disgusting.
And you call yourself a DOCTOR? REALLY MAN, NOT COOL
Wacky
😋Yummy!!
Thank you, for I'm one of those who can't eat EGGs. Finley a cake for me.
what's the point of not giving measurements?..
They give you a link to the recipe.
Looks flat
Prefer that you give The measurements of your ingredients as you're adding them
They give you a link to the recipe
