Good stuff, but yours looked much better...the actual onions and garlic probably makes a big difference. Great stuff Rus!

Oh, man, I love to do pork belly. I use the "sacrificial vegetables" too, like you do. Another great liquid to use (not drink, though) is Redd's Wicked Red Apple Ale. This stuff imparts a great flavor to the pork belly.
