    I use the rack from the drip n griddle deluxe as a tray to carry what I'm smoking...works really well.

    Seriously cool variation on a Cubano, but, then, you could put those pork belly "burnt ends" on almost anything and make it delicious. Great cook, Ry.

    Tech note.. I would recommend backing up the closeup cam. It is a bit too close in the 1 on 1 shots

      The framing is dictated by factors sometimes beyond my control outside. Background ambient lighting, location, direction, position in relation to cookers. Inside is set for lighting and setup.

    I feel like you usually keep the bottom vent open, but did you keep it fully open this time around, Ry??

      On the SnS Kettle I usually keep the bottom vent closed once it’s at temp and then just use the small smoke hole to dial it in.
