Because he's trying to establish a casual and light-hearted relationship to the audience. He's primarily a comedian, so that's probably a register he's more comfortable with and it would help him prepare the audience for his style of interview
There are lots of hints in Blade Runner 2049 script that prove that Denis Villeneuve gets it, he gets the point of the first movie, so he was a rather good choice to do a sequel. I strongly believe that we would get a significantly lesser movie if Ridley Scott had time to shoot it himself.
I thoroughly enjoyed this. I wish it could have gone on longer.

Because you can see a whole channel disapears with no second thought. It's a risk.
