    I never use water when I make tamales I always use chicken broth it gives the masa way better flavor...
    And I'm going to try this recipe and I'm going to use chicken broth instead of water on this recipe too

    i like this! other recipes make the pupusa look to thick, like i'd get mostly bread until i got to the middle. i don't mind the cracks is the filling is more even! love it. gonna go get the stuff for my curtido so it can sit overnight!

    • @BadCook77
      @BadCook77  5 років тому +1

      silentj624 I agree! It’s always been more cornmeal than meat. 👍🏻

    I did it like this with my ex wife's aunt around and she got on my case!! She worked in a Salvadorean Restaurant for 20 years and taught me how to do them by hand but this is a good way for beginners!! Thanks for the tips!!

  • @jeffcastaneda7010
    @jeffcastaneda7010 7 років тому +3

    I have to say I like your ingenuity. That is a very smart solution for beginners. Of course, as you said, Salvadorian pupusa-makers do it by hand. But for the beginner, flattening the maza ball after stuffing it with the filling can be very challenging.
    I wonder if they end up tasting the same, or doughy though. When you make them with your hands the filling spreads evenly inside and a little bit outside. As a result, most of the maza in the pupusa carries a little bit of filling and flavour.

    I always add a tablespoon of chicken bouillon and a little bit of salt, gives a good flavor to the masa. But I struggle with the masa the texture.

  • @hectorportillo2572

    The only downside of that method is that you can't control where the filling goes, which can lead to edges without any filling

      Yes. I used a vacuum sealer and if you’re not careful it will squash them. If you’re going to eat them soon, I’m sure a ziplock will be fine. Hope you enjoy them.

    Wow, that idea of the oiled wrap and the bowl to flatten these little hummers is PERFECT! Now I've taken things a step further, and with the meat I slice it up, fry it in advance. Instead of making it into a paste I add the mozzarella with the meat into a bowl and let it set overnight so it becomes solid. Then I take a serrated knife and thinly slice it. When the corn balls are flattened I add to one side some of that meat and mozzarella, and instead of picking up the ball to work it, I flip over in the oiled wrap the other side of the corn flat....kind of like a taco shell. Then I smash that again with the pot. The meat shows a little in the display but so what? It looks cool when serving with the sauce added on top. You have made this so easy, so I hope I've helped you to make it even easier! :)

    Okay man! You are on to something here. I’ll def be using your technique but I will be patting them out by hand after I’ve got the filling since I’m good at it haha but the first part! 👌🏼 oil being on the outside too is great for when you go to cook them. My husband is from Central America so we love eating these! Do you make curtido with yours? I have to have it with my pupusas!

    • @BadCook77
      @BadCook77  5 років тому

      Lol I made them once. Not too hard but you really need the right cookware to steam them in large batches. Also, cook time is important. My MASA was a little firm and not fluffy.
