The 14x14 size mat is perfect for the small trays as you don't need to piece the sheet together to make it cover a tray. 1 pack will give you 12 finished pieces.
The 14x21 size mat is perfect for the medium and large trays as you can cut the sheet to fit the tray perfectly without having to piece it together. 1 pack will give you 16 finished pieces.

Well, I bought those Silcone sheets, cut them down to fit my trays and "BOOM".. I'm now doing lots of double stacked trays.. saving time & money. Thanks for this great tip!

Excellent tip. I have a small FD'r so this really improves my space considerably.
Now I'm wondering if wire racks might have their place in the system. Perhaps doubling the space for things that need more firm support.
Thank you for the video. Of course harvest rice suggests it's not to do this but I'm probably going to do it anyway. You have no problem with them drying it different levels because the ones on the bottom really have not as much breathing room as the ones on top

Yes 100%
Do you have to change any of the freeze dryer settings when you add the extra layers.
I did add add extra freeze time and extra dry time but the temp was set to 125f.
hey i know this is irrelevant to the video but i was wondering if i can use cheesecloth or gauzes instead of the wraps you use in your videos
