"It doesn't have batteries and doesn't have WiFi..." Love it! I got my set of Victorinox knives today 10" butcher's knife, 6" knife and 6" flexible boning knife. I thought a scabbard would be easy to find, turns out I was wrong. I'm in no way a butcher, but I'm harvesting my own meat from small livestock (chicken, quail, rabbit). Moving on to pigs if I get the wife to agree...

Do you like the 5” boning? Flexible or semi stiff?? Thank you for your response.
I find the 5' semi flex to be the best and most useful boning knife.
whats recomended steel typeto butcher?? also skinning ?? regular or fine?? thanks
Regular steel, not too fine. The most important thing is to use an oilstone or a whetsone rather than a grindstone. Grinding just wears down the steel in your blade.

How do you sharpen your knife without grinding them?
Sorry for the delayed reply. I use a whetstone to sharpen my knives. Take a look at butchermagazine.com/knife-sharpening/ There's a video on using a whetstone.

Innuendo is in the mind of the reader. In Ireland we call those knives boners. I understand what you are referring to but it never crossed my mind that it would be misinterpreted.
