If you would like your son to speak fluent Welsh and English, there are loads of Welsh speaking primary schools in Swansea that could be a really good choice to integrate even more into the culture. The reason your boss doesn't want you to call her "Mrs Esther" is because that's not how we say it in the UK. We use titles like "Miss / Mrs / Mr" with the person's surname, not with their second name.
Let's say your boss is called Esther Smith. You have two options. You can call her "Mrs Smith" or you can call her "Esther". You can't say "Mrs Esther" because that sounds very very strange to a British person. If you want to say "Mrs" you have to use her surname.

It's funny you mentioned the sorry issue. I just Hurd an explanation last week after decades of doing it. It's a reflection of oppression. Apartheid, in my case, I'm a latina/woman. It's being ingrained in us to apologize for everything, including when it's not our fault. It also happens with abused children. So, non pressed people can't understand why we do it and even get offended. I never understand my son as a child asking me the same question why u sorry it's not your fault because I used to do it for everything. If he got hurt, if he got a bad grade, if he was feeling under the weather, if his friend did something mean. Everything, all the time!
