Instant Pot French Onion Soup

  • I love love love French onion soup, so when I heard I could make it in the instant pot I had to try it. Come along with me and let's make some Instant Pot French onion soup!
    1/4 cup butter or vegetable oil
    5 or 6 medium yellow or red onions, halved, peeled, and sliced 1/4-inch thick
    1 tbsp brown sugar
    1.5 tsp salt
    1/4 cup dry sherry
    4 cups beef broth
    1 tsp Worcestershire sauce
    1/4 tsp ground black pepper
    1 bay leaf
    (1-inch thick) slices of a baguette/or chunks
    Cheese of your choice
    Select the sauté setting on your instant pot. The timer should default to a cooking time of 30 minutes. You will use every minute of this to sauté the onions.
    Add the butter, Once the butter has melted add the onions, brown sugar, & salt and stir, separating the onion layers.
    Cover the pot with a lid and let the onions cook, without stirring, for 10 minutes.
    Uncover the pot and continue cooking the onions:
    At this point the onions should be softened, but not brown.
    Stir the onions vigorously.
    Continue to stir the onions every 2 minutes, making sure to nudge loose any brown bits from the
    bottom of the pot as it develops with your spoon. Do this until the sauté cooking program has ended after 30 minutes and the pot turns off automatically.
    At this point, the onions should be caramelized and golden brown.
    While the pot is off but still hot and the onions are sizzling, add the sherry. Use a wooden spoon to thoroughly scrape any remaining bits from the pot bottom.
    Stir in the beef broth, Worcestershire, bay leaf, and pepper. Secure the pressure cooker lid in its sealing position, then select high pressure, & set the time for 5 minutes.
    When the cooking ends, let the pressure release naturally for 15 minutes, then move the pressure
    release valve to "venting" to release any remaining steam.
    When you are ready to serve the soup, discard the bay leaf. Taste the soup for seasoning, adding salt & pepper if needed.
    Preheat the broiler on your oven and line a baking sheet with aluminum foil. Place broiler-safe serving bowls on the baking sheet, then ladle the soup into the bowls, filling them to about 1/2-inch from the top.
    Add your bread and cheese of choice and broil for 3-5 minutes or until cheese is melted and golden brown.

    Yummy! So easy in that instant pot!! I never knew you used just regular yellow onions! Chris' haircut looks real nice!!

    Ok I'm definitely making this one day this week. I'm going to have to work with what I have on hand. Rye bread, white chedder and parm lol hopefully it turns out ok. Thanks for sharing beautiful friend!

    You know I love French onion soup and have a video on my channel canning it! But I always love having different ways to make things. Onions always have bothered me… and I had to prep them in the mornings at Wendy’s.
