Savannah: Biscuit half, smoked country ham or bacon, scrambled eggs, fried green tomato, pimento cheese grits. Santa Fe: Toast points, Chorizo, fried over easy, salsa. Chesapeake: Crab cake in place of Canadian bacon. Irish Benedict: Corned beef in place of Canadian bacon. Mornay: Sauce Mornay in place of Hollandaise. There are hundreds of regional and International variations of this magnificent dish, and all are superb. There's only a few I wouldn't go near with a ten-foot fork.

This is actually one of the top tricks, often used by top chefs. Butter the muffin, and even griddle pan them for like 2 minutes, sometimes even using a baking brush to brush some melting butter on both buns. It increases the taste tremendously and everyone can do this trick!

I tried to make this exact recipe for hollandaise sauce earlier this week and it tasted so so buttery! Is it supposed to taste that buttery? It was such an off putting taste for me. (I tried adding a touch more lemon which just made it more lemony)
You could be a TV chef! Only thing that bothered me was adding salt to water when poaching eggs - I think they form better without salt and you can always add some later if needed.

I think the trick is to whisk the mixture enough, if not whisked constantly, then it stays buttery.
