Never wash mushrooms. Wipe em with a lightly dampened cloth. Mushrooms are sponges that already contain water. They'll just take on more water by washing them.

Why cut off the stems? Those are edible too.
They taste good but they're not fun to chew: the butt of the stem can be woody and tough. I do save them and add them to stocks, though.

Only one problem, Thats sliced mushrooms not chopped...
Don't forget to wash the mushrooms first. Those black specks are steer manure on them.
