Everyone loves Carbonara, today I try to combine 2 things I love. Burgers and this incredible Italy pasta, but I am not sure if it will work so I did 3 variations to find out the best one.

As an Italian I can easily state that we love and feel proud when people creates new Italian-inspired dished. On the other hand there is no upper limit to the hate we feel when people prepare trash (e.g. 99% of the US and UK TV chefs) and call them authentic Italian dishes! With that being said, amazing work as usual, Guga!!!!
This, we don't care about inspiration, but when you use a well known name to call a completely different dish, well, that gets us angry.
But these burgers? Amazing.
I mean that's understandable but there's also a lot of people like Lionsfield.
This one legit made me angry lol. Those look so unbelievably, insanely, over the top delicious. Jealousy levels are off the charts.

Third one is down-right criminal. The first two can be acceptable, but the pasta frittata inside the burger is too much
I remember this one burge joint i visited, they carbonara burger on the menu.
More expensive than a regular burger as you can imagine, when i ordered it i was expecting something special.
What i got was a beef patty topped with a egg, bacon, and some sauce i'm sure hell wasn't made out of egg.
Congratz Guga on taking the components of the carbonara and using them in a burger properly.

When you went to fry the frozen carbonara, I thought those would be the 'buns'. My suggestion is after making the frozen carbonara circle cut outs bred them and fry them to be the buns; fry the egg white in a circular mould; instead of trying to recreate the 'yolk', spiral the carbonara-hollandaise mixture. So its breaded pasta 'bun', smash burgers, cheese sauce, fried egg white with carbonara hollandaise topped with other breaded pasta 'bun'
Bro I'm Italian and the only thing I can say is that you should be proud of your creativity! All the burgers you made look delicious. Also carbonara burgers are actually a thing in Italy, not traditional, but still a thing and super delicious nonetheless.

French Cook Alex has made a whole series about Pasta Carbonara and how to make it yourself, really helped me cooking this dish too... no pasta scrambled egg for me anymore.

I raised pigs for many years, jowels are the best cut on the whole hog. Jowel bacon is amazing
Jowls are my favorite part too when making adobo and singing.
As a butcher, I agree it’s one of if not the best cut. Definitely the best bacon on a hog. The only thing I don’t care for is certain parts of the jowls have glands and it’ll produce a stickiness to the pan. Still tastes amazing though.
@Buddystemz I think those glands add flavor, I usually cook my bacon in the oven so I don't get that sticky oan problem

Hey guga a tip that i think would make the assembly of the first burger easyer is to make the guanciale strips instead of cubes like bacon (it won't change the flavor)
What you're doing is pretty smart. Mayonnaise or hollandaise is pretty standard for a burger, but replacing (upgrading) the more neutral fat with something with more flavour can only be a win. Maybe you can make a video where you try out different oils/fats for making sauces, I'd be curious how well the wagyu fat would do against the guanciale. Adding a cheese like pecorino is also great to boost umami even further, but even without it I bet it is already superior to a regular sauce made the fats with less flavor.

I'm italian and those burger look absolutely delicious , plus there isn t anything to be angry about it, the premise is that this is some sorta of fusion dish, and by that standard you used extremely authentic ingredients and methods from italian and american cousine. Even the fried pasta is something we make (i think in naples, but don t quote me on that, i m only sure somewhere in italy it is a typical dish)

My personal take on this, which I might try
Go with the smash burgers
Use a slightly leaner beef and grind in some guanciale to make up the difference.
Do the sauce baked bun
And the sauce on the burger.
Slice the guanciale instead of cubing it and cook it up like bacon to bring some more burger structure into the carbonara burger.
Maybe do the pasta too cuz that seems cool.

I try to use carbonara sauce in as many recipes as possible. Carbonara polenta pizza is my latest - basically, polenta baked as a pizza dough, with carbonara sauce added afterwards to pasteurize the eggs.

@GugaFoods, my brother in law is from Brazil and y'all have a great community in Florida too, including the food. I would love to see you cover more Brazilian food on your channel. I feel like it doesn't get enough representation and I would love recreate some of the Brazilian dishes I had there in both Florida and New York. I still make feijoada on occasions.

You can also use pork jowl. If you have a Winco, look at the bacon area near the deli, that's where it'll be.

Can you try: whiskey washed butter compound.
Basically you wash the whiskey in butter. Which creates a distinctive whiskey taste. Then now the butter is whiskey infused. So take the butter and turn it into compound whiskey butter and try it with the steak

I would put the guanciale in the patty, toast the buns with some guanciale fat on the inside faces, then assemble the burger with some of that egg saus you make and a sprinkle of pecorino cheese and black pepper.
