Easy to make Cherry Cake is delicious to eat and share! This British classic is a winner every time!

  • Cherry Cake! Even if you're not a fan of the Great British Baking Show, you'll love how easy and delicious this great cake is to make!
    Ingredients:
    2 ¾ cups (330g) all-purpose flour
    4 tsp baking powder
    1 ⅓ cups (220g) superfine sugar
    2 sticks (220g) margarine or butter, softened
    4 large eggs
    1 ⅓ cups (130g) almond flour
    2 tbsp whole milk
    2 cups (330g) candied cherries, halved
    20 whole skinned (Marcona) almonds
    1 pinch of fine salt
    Instructions:
    1. Heat your oven to 325°F. Grease and line a 10 inch springform pan with
    parchment paper.
    2. Put all the ingredients except the cherries and almonds into a stand mixer fitted with the paddle attachment. Start mixing on a low speed until the ingredients are combined. Increase the speed and mix for 1 minute until the mixture is smooth and pale.
    3. Fold three-quarters of the candied cherries into the mixture. Spoon into the lined springform pan and gently smooth the top to level it.
    4. Sprinkle over the remaining candied cherries and poke them into the surface of the cake. Arrange the whole almonds over the surface and gently press these in too. Bake for 1 hour until the cake is risen, lightly golden and springs back when gently pressed in the center.
    5. Leave the cake to cool in the pan for 10 minutes then turn out onto a wire rack and leave to cool completely.
    6. Enjoy!
