    We just finished 4 bushels of peaches. 70 quarts canned, jam, peel and seed jelly and butter. Went right to the orchard and got seconds for a really good price.

      I'm genuinely curious, are the peaches organic that you use for the peel and seed jelly? I'm always curious about the sprays. I mean I know that any spray that goes on the outside of the peach also goes inside it, but it seems like the peels would have a higher concentration? I don't know, I'd really like to know.

      @@katieyungen1647 not organic. Hadn't really thought about it. Unless you grow your own, I don't know where you would find organic. Peaches are really hard to grow I've heard.

      Peaches are really not hard to grow. Just be sure to NOT GET early Peach trees. Often they freeze, but later Peach trees, Fall harvest like Alberta, Free stone etc. Alberta is my favorite. Just saying

      @@jeanniek1498 ,we have planted one peach tree but it will be years before we see any harvest. This is the first time I have canned peaches in decades. At 69 I am not holding my breath waiting for a bumper crop. 😁

    Leaving peels on peaches that are freeze dried have more of a peach flavor that without.

    It's always so nice to see you and we enjoy you channel. Mike and I have ben gardening her in central Texas for over 30 years and this has been the worst drought ever. We lost most of our spring and summer garden. 47 day with no rain and temps 102 to 108. Good thing we have at least two years of food stores. We will be planting the fall winter garden in September and looking forward to better weather. We flash freeze and it works great before vacuum packing. Thanks for the video, we love the channel.     If the peaches are not overly ripe you can use a clean pair of needle nose pliers to reach in from the stem end to pull the pit. Then use a sharp apple slicer to reduce the work load and expedite preparation.

    Add a few frozen peach slices to a glass of iced tea for flavor and chilling. Any frozen fruit will do but peaches are my favorite.

    One of my favorite things to eat in the summer when I was young was to pour a quart of peaches or apricots (my favorite) in a blender with ice and have "smoothies." (Were smoothies a thing in the 70's?) My mom didn't use heavy syrup but it was sweetened. So cool and refreshing. We would process peaches at home or apricots at my grandma's with all the aunts and cousins that lived nearby. My grandma would also make fruit leather, roll it up tightly, and then cut it into bite sized pieces. I would sneak in the storage room and eat them. Good memories.

      We lived in a desert region. My mom used to blend up our nectarines, spread it out on waxed paper on a cookie sheet. She then set it in our car which was parked out on the street with the windows cracked about an inch. It was the best fruit leather! She dried grapes/raisins the same way.

    Harvest Right has gone up in price a lot. Wish I could afford one. I use to can peaches with less sugar (2 cups per recipe) and alternative sugar for my dad and we used it for toppings for pancakes, ice cream and dump cakes. We loved it! Maybe another idea.

    I’ve done hot peach jam, peach sauce both hot and plain. I got 50 lbs more on Sunday from the peach truck. I’m going to be drying skins to make a powder, canning peach pie and Spiced Honey Peaches.

    My daughter freeze dries sweet pepper slices seasoned with ranch dressing powder. I just tried these several weeks ago. She makes them out of the tri colored peppers she gets at Sam's. They were good enough that I will grow and freeze dry these peppers next year

    Even though it looks like you breezed through prepping the peaches, it was hard work. I don't blame you for not peeling them. The turned out beautifully. I would imagine leaving the peel on gives the freeze-dried ones a peachier taste. Do you put any lemon juice or citric acid on them to keep them from turning brown over time, especially the frozen ones? Thanks for sharing.

    First thing that came to mind when I saw this video was my Granny's peach preserves! Absolutely mouthwatering on a buttered biscuit! I have tried my best to replicate her recipe but it just never tastes like hers.

    I’m with you if I had a freeze dryer I’d freeze everything I could because I for one don’t do pies much nor a lot of sweets. But, I think freeze dried stuff would be good like fruits and some vegetables.

    I'm seeing where people that are freeze drying in a home freeze dryer are saying that you should never have more than 2 1/2 lbs. per med tray or 2-2 1/2 cups of liquid per tray...have you seen this information anywhere ? I have tried to contact HR and ask them,but I haven't been able to get any responce from them.

    The peaches look great! I mainly freeze to preserve my harvest, but I recently purchased a dehydrator. A freeze dryer is definitely not within my budget. I will definitely be checking out that book, as I'm sure it will be quite useful. Thanks for the suggestion.

    It's probably too late, but if you open the pit of the peaches, you can use the inside for making Italian cookies (amaretti) or a specialty liquor like Amaretto.

    You're partially right, individual freezing of slices is part of flash freezing. We're flash freezing is different from just freezing something, is in the temperature, flash freezing happens when you use a freezing source lower than -100. For instance you pick up blocks of dry ice, you put them in the bottom of a cooler then you put your trays on a rack above the dry ice seal the lid of the cooler and just use a a hand-powered vacuum pump to pull off a little bit of a vacuum. Leave it for about 20 to 30 minutes. And your food your food will be frozen. That's flash freezing.

    Thank goodness you both have talked so much about your Harvest Right freeze dryer. I invested in 1 late last summer and hardly let it rest. This year I've been putting up my raspberries and blueberries for my mom because I had such a bumper crop last year and am now helpingher with some of her food stock. It has helped me to not only put up food that I grow for myself, but also for my family, as well as putting up store bought meat, eggs, and what not. Blessings

    I think Harvest Right has simplified the user interface a bit for their software. Our (large) freeze dryer arrived in March, and it doesn't ask us whether the food is frozen or not. It does tell you to wait 15 minutes before loading food, so maybe they figured out how to get it down to temp fast enough to prevent the food from thawing. We love this machine.

      We also got a large freeze dryer in February. We just did 2 - half bushels of peaches in our freeze dryer about 3 weeks apart. I did not leave the skins on them because I don't like skins. They turned out beautifully! We love our machine and have gotten a lot of use out of it with assorted food items. Our home peach trees won't be ready to harvest for at least another 3 weeks, and I am sure we will freeze dry more peaches when they are ready. They are delicious snacks!

      We love our HR, too. Mine runs almost 24/7 between defrosts. We are processing our harvest and meat out of the freezer.

      @@clw.7146 I had initially ordered a medium, but when I told my husband what size I ordered, he said that I should have ordered a large. Lol. So, I called HR and changed the order. I also changed the color because it was kind of a gift for him, and he mentioned a different color. Ours has been almost non-stop since we got it.

    I get that book, i have come to my conclusion that if you can freeze it, you can freeze dry it, maybe some variation but for the most part frozen to freeze dried is do able.

    I'm not sure when this video came out but I just found it.
    I really wish I had/ could afford one of these freeze dryer. I'd be doing all kinds of stuff. Even if i had to buy all the foods I'd like to do for future use. But sadly I will never be able to own one. It really sucks when your one a fixed income and housing and bills take up darn near all your money right off the bat on the 1st of the month.
    I did not even get a garden in this year because we had way too much rain in the spring/early summer for me to get out there and work on it.
    But I truly enjoy watching your and others on YT working in your gardens and such. and all the animals too.

    Changing to updated software is easy. I have a few recommendations that made things go smoothly for us . We Label bags before filling so its easier to write and always use oxygen absorbers. If using a jar I would use oxygen absorber and vacuum seal the jar. Freeze drying is a great way to preserve eggs and parchment paper on freeze drying trays for any sweet food is always a plus, much less sticking and easier cleanup. Mylar bags come in many different thicknesses so adjust heat seal time, so that bag isn't sticking to heat bar. Although the oil less pump is more expensive, it's a lot less maintenance and no keeping track of when to change that oil. keeping unit clean is a must, this includes the dust buildup on pump, drain line, interior and door is freeze dryer, top and underside of the tray holding unit. Just wanted to share those things. You guys are awesome and your video gave some good tips for beginners to put into use. Keep the videos coming. Okra is also a great freeze dried snack. Lol

    I don't preserve, but I buy freeze dried fruit to snack on and to put in my lemonade. I throw in strawberries, peaches, or mangos, usually some kind of combination

    The peaches make my mouth water! My grandparents had a peach tree and we canned and froze peaches each year. That tree died several years ago and I miss cutting up the peaches (and other fruit) with my grandma. We had some great conversations and the time went by quickly.
    After this morning I’m going on a search for peaches!

    I didn't realize it was possible to freeze-dry food at home! How cool is that?! WOW!!
    I'm curious, though, how many watts does it run on?
    I'm trying to keep our electric bill minimal as prices of electricity continues to go up. Or, if I could possibly run a solar generator to use the machine, if needed that's when that really becomes important.
    There seems to be a steep learning curve to these things when starting from scratch rather than learning from multi-generational 2nd knowledge as it's passed down down through generations.
    I'm hooked - I want one of these machines!! Yummy!!

    Vacuum sealing the jars and the bags would help with excluding moist air. Without doing a scientific test, I would think that the oxygen absorbers would not be necessary if the containers are vacuumed. I'm always trying to find ways to do things without needing to purchase items each year and I try to stay away from plastic if possible. Thus, I'm a fan of glass jars and stainless steel jar lids. I have my peaches hanging on the trees, but like your situation, they sure could use more rain. All the best.

    I've been seeing a number of places you can go buy Peaches by the bushel. I wish I could can, freeze or make jams, jellies or have for desserts. I would be lost without something sweet once in awhile!! I LOVE PEACHES!! Great memories canning PEACHES with My Grandma & My Mom, loved it!!

    I'm water glassing eggs now, because I think my chickens will start molting this fall. I had a fair tomato crop and canned them. The rest of my garden was disappointing. It's too hot in Texas.

      Tracy Davis, Prices won't come down, save enough for a down payment & join their payment plan. You also will be saving on your food budget?

    I peeled an entire bushel but I cheated! I put my peaches in boiling water and the peeling came right off! I have done many a peach in my HR Freeze dryer and they are delicious~~~~ Right now its a quandary do I do blackberries or peaches or watermelon. What a job, I think I could have 2 HR and not be totally done!

    Please check your peaches after a few days to see if they are soft. You should not have to warm the tray unless you did not package as soon as the machine stopped. If the tray is still cold when processing time is done please add 2- 3 hrs to ensure the food is completely dry. The tray should not be cold when the process is complete.

    The sugar to water ratio of course will change with this process. Most fruit become super sweet because natural sugars are left behind while water is removed. When eating just as they are when they come out of freeze dryer, diabetics may find an increase in their sugar testing readings.

    I bet if you put what you want to preserve in a jar and vacuum seal it and keep it in a dark cool place it will last just as long as it will in a Mylar bag.

    I like the idea of freeze drying food if someone can afford a freeze dryer but I also like dehydrated food also especially the cost of dehydraters are not nearly as costly and easy to get .I feel no matter how a person is able to preserve their food weather it's by canning,dehydrating,or freeze drying they should do it.

    I picked up 4 boxes from Shetlers, in Seymour. I will be canning and drying them. I haven’t a freeze dryer . So o will do them as I have before. Thank you for sharing.

    The dehydrator you don't have to put in the freezer but they're freeze dry stuff you have to put in the or the freezer California

    Sarah. 2 questions please. 1- any disadvantage to leaving the skins on? I hate dipping in hot water and removing. 2- most important--what do you mean by “flash” freezing? Do you have a special freezer? Flash freezing is usually done at super low temps. Thanks

    For storage in canning glass jars. (Ball, etc) I use my sous vide vacuum chamber- I place an oxygen absorber in the jar. Most the air is vacuumed out and I-have a good seal (vacuum and air tight. You place the lid and ring on finger tight- then vacuum

    Wow! I wish I could find large quantities of peaches like that! Peaches are my all time favorite fruit, so I'd eat a lot of them, share with others, and make peach pies too. YUM!
