The trouble with this and almost every video about tea that I've seen on UA-cam is that it's too general. Every tea is different! They all require different water temperatures, steeping times and methods to produce the best cup.
You can get multiple infusions (more uses/cups) when correctly brewing. He made Oolong. I am a big time Oolong drinker. I also love green teas. I prefer loose leaf. Better taste, more infusions. You can still re-use tea bags, just not as much as loose leaf. Those who think he is doing it all wrong... he is talking about Chinese teas and loose leaf so he IS doing it RIGHT. As far as sarcasm goes, I don't see/hear it. Love the vid!

There is no "right" or "wrong" way to make your tea. I like mine to have strong tannins because that taste best to me. If I don't taste that it doesn't give me that pleasant feeling on my tongue. I use 4 tablespoons in a four cup cast iron pot and leave them in there the whole time I'm drinking it. I like it this way, other ways are too weak for me. The best tea is a tea that you want to drink again.

I mean that's barely a begginners, there is even more to learn about tea, such as how teapot material affect taste, how temperature even without leaves affect taste, and how volume brewed at once affect taste.
If your Tea that has not enough taste the solution is simple you can either increase temperature, increase steeping times, or increase tea quantity, do mind that if you increase tea quantity you also increase amount of steeping you can do, and increasing temperature is probably the least recommended solution, unless you are obvioulsy brewing at a too low temperature.

And if you get the grocery store tea,most likely your getting factory stuff or floor swept crap. A lot of baged stuff isn’t even tea especially when you see it all crumbled. Teavivre is a good site and shows you how tea leafs actually should look like.

This really made the perfect cup of tea, I've got a boiler that shows temp so it was perfect!
If you ask a Briton, a Chinese, an Indian, a Japanese, a Russian and a Turk how to make tea you get wildly different answers. All can make an enjoyable one, but they won't taste the same.
when you bring tea to a boil, you're not boiling out the oxygen. when tea boils, you're just adding energy to the water changing its state from a liquid to a gas. what's bubbling is the gas form of water. the only way to separate the oxygen from the hydrogen would be to put an electrical current through the water. so if you're boiling your water, never fear of losing oxygen because you won't lose any this way.
Philip Madden Thank you for the additional information. I was only meaning that boiling water wouldn't separate the oxygen from the hydrogen. That's the impression I got from the video and I wanted to clear that up. They may have meant something else entirely. I will have to try this superheated experiment, sounds pretty cool.

How I boil the water is WRONG, how I steep my tea is WRONG and bloody hell, I'm sure if he observed, how I sip my tea is probably WRONG too. Oh well, I shall go to my grave apparently drinking sub-par tea. My life is over. *drinks some more tea... the WRONG way* :D

yeah and Turkish tea: boil for 20 minutes to get crazy strength and then dilute with warm water. But I guess they use slightly different tea. In short : there is more than one way leading to Rome.
+Joaquin G. Those advice don't applies for British, Tuareg or Turkish tea which have their own style. (But British tea is bad to begin with so why even bother?)
If you start looking for really high quality tea, in detail, not just the culture and how people are used to making it. As in Oenology-like almost sciency way, discarding all cultural aspect that just happen to be bad choice that people keep doing. Well then, there isn't much left. Only China, Taiwan, Japan, Nepal, etc. The best tea are from there, and this video is a tiny preview of the Chinese culture of tea. And it of course don't even apply if you don't use whole leaves Chinese or Japanese tea. This video is really Chinese-orientated.
Except for the water. I don't know why he's so obsessed by the water. Boiled or boiled and then cooled down, it doesn't matter. What matter is that black tea is brewed at 95°C and green tea at 75°C. Temperature is the second more important thing to make good tea, first one being getting good tea leaves. But water really don't matter that much.
Either you get it or you don’t get it. Some people drink cardboard box wine or Bud Light and think there is nothing wrong with it. I mean, they genuinely enjoy it: you gonna tell them there is something wrong with it and that Guinness is better?

Not really. the differences are minor but they are there. but for a regular tea sipper they're not noticible that's true.
What about adding back oxygen by poring from a great height.

I think the most important is temperature of water though i never check them when I steeped my tea. I always used boiling water (though i cooled them for around 30 secs) because i used warm water once for my tea, and it tastes disgusting (the taste and the smell are not comig out clearly...it feels damp or bland). I prefer to leave my tea in the pot, which means I didnt care for how long I steeped them. Though I have once did it properly according to recommendation of some specific tea (5-7min), but I prefer the stronger taste after I steeped them longer enough. I mean tea is preference.

This all applies to green tea. Black tea is another matter. My method: Start with a dirty mug. It's July and I don't think I've washed mine yet this year. Next, drop in a bag of PG Tips or Yorkshire. Really any black tea will work in a pinch. Fill with tap water and microwave until near boiling. Fish out tea bag (optional), add a small amount of honey and milk. Enjoy.

I Love my Earl Grey tea at the temperature he mentioned (180 degrees) and strong but he is right! I tried this once, I had to serve it for my family
What if the steeping instructions say 3-7 min? do i follow that?
Guess not since some articles present scientific research that backs this guy's advice to steep less than two and a half minutes, especially with green tea specifically.

I bought loose tea and I'm willing to try these tips once I buy strainers.
One of the best and easiest ways to brew loose leaf is inside an insulated stainless steel travel tumbler, which keeps the tea at the right steeping temperature and lets the leaves move around. Then you just use the infuser to strain it into the cup/mug/pot. Or, using a simple kitchen strainer instead of an infuser works for most teas. That's how we brew our own tea 'by the cup' at home.

Does hard water (heavy calcium content) affect the steeping process? I use a water purifier, but it does nothing for the calcium. Also, do you know if acidity or alkalinity affects the tea?

Dude do you even Tea? All jokes aside, while there are good points in this video you can not put so much generalization into brewing all tea into 2 minutes and 20 seconds of a video. In each of the "you are doing it wrong" cases I can think of instances where you can break those "rules" and be 100% right producing far better tea than you would if you stuck to those "rules."

This is wrong in so many ways!
1) Temperature: It depends for the type of tea, and how you like it. With Bai Hao Yin Zhen some like a very floral, delicate brew (85-90 C) and some like a stronger, more nutty brew (90-100 C).
2) Brewing apparatus/Qty of leaves: The only proper way to appreciate the complexity of good (NO TEABAGS) tea is brewing Gong Fu style (for tutorials on that I suggest meileaf.com) ideally under 200ml of water, and the amount of leaves that is used depends on the tea again (ball rolled oolongs tend to be around 7g per 100ml and some greens 3g per 100ml). For almost all teas like this they should be brewed for 10-20 secs for the 1st infusion. They can be infused usually 5-8 times, but some can do 15+ infusions.
Small teapots, gaiwans and flute/ear brewers should ideally be the only things used to brew tea.
But, my recurring message is that tea is very personal and people should be encouraged to experiment (within reason).

There’s no point being an elitist. Tea is best enjoyed however you like. There are certain methods that work better but at the end of the day, if you like it, that’s all that really matters. If you like your tea gong fu style, as I do, that’s fine. If you like it out of a chipped porcelain tea pot, that is also fine.
The best tea tastes good, wether brewed in a fine pot or a tin cup.

The French press (called a tea press by tea drinkers) does not "force the flavor out." Where does the "flavor" go when it goes out? Also, the ability to adjust the infusion time is one of its advantages.

This all nonsense. Black tea needs fully boiling water poured into a pre-warmed pot and allowed to steep for 5 minutes. If you like it strong use more tea and steep a bit longer, 7 minutes. I use 2 teabags and I like the British tea Yorkshire Gold. It depends some on the tea company. Twinings sells it's tea in Canada where I am and it states clearly on the box that it's not the full strength Twinings sold in Britain. It's a much weaker tea. So you need to be careful what kind of tea you have. Oh and this guy Mr Wong works for Tillerman Tea an American company. Americans know nothing about tea, how to brew it, drink it or buy it. Generally they plunk the teabag in a cup and use hot, not boiling water. Yech!

for 1 each tea has different brewing temps, 2 amount of tea depends on what kind of brewing method you are using.- western or gongfu..3 make sure if you are using bags that the triangular satchels are not plastic research has found that the plastic can leach toxins in really hot water. 4 steeping times vary with each kind of tea.

Instead of water, I like to use Dorito consomme to give my tea a southwestern kick.
Most of what this guy says is true. Delicate teas, such as green tea, the water should be heated to about 180 degrees F. But black tea you actually want a little closer to the boiling point, a little over 200, up to 210. He's right about steeping for about 2 minutes, but herbal teas can be steeped for about 3-6 mins.

What about the zojirushi water boilers? They always bring the water to a boil before letting it cool off to the desired temperature. Should they be used to make tea the "right" way?
I loved him
An engineer type tried tea that had water that was boiled and water that was not boiled. Both tea experts and nonexperts, tended to say the water that was boiled was the tea they perferred in the blind test. Not totally scientific but close enough for me.
For green tea take 1.5g of green tea leaves and keep brewing temperature at 80c, stir it with a spoon to settle leaves at bottom and also this will help to open extract the leaf contents to water and allow it to brew for as long as you want as over brewing will not affect the taste of tea much and also you can't over brew as tea already gets cold if brew for more than 5 minutes.
From what I've learned, while over-boiling the water is bad, the water should hit a full boil for black teas, although I'm not sure about the science behind that. Some teas (including most black teas) can steep 3-5 minutes. Everything else in this video is consistent with how I brew tea... especially the part about not over-steeping green tea. I once left sencha in my pot and forgot about it-maybe about 4 minutes-and it was undrinkable.
i reuse my tea bag till the tea gives very little color to the water.. you describe the tastes as unpleasant but i find it really tasty the further you boil the tea..
