I was sitting there thinking how is he going to stand over the stove and caramelize 6 lb of onions. I've caramelized onions and it takes forever. I never knew you could do it in a crock pot and not with bourbon. And then making candy out of it. I'm going to be trying it. You've given me so many cool ideas. I didn't know you did jello balls. So I'll have to see if I can find that video. I didn't think Jell-O would ever work with all the sugar it has. No doubt you did something to outsmart the process of freeze drying jello.
Wow! You're video is so timely! I just picked up a bottle of Jim Beam (no relation!) to make more of the bourbon BBQ chicken. I followed your last video and it turned out great! Now I want to try making the onion balls. You have such great ideas!
Great idea, just remember to remove the frozen balls from the mold before freeze drying. I didn't make that step clear in the video and I think some tried to freeze dry in the molds with no success. If removed from the molds before freeze drying and you like caramelized onions then I have no doubt that you will love these!

@WD Well, perhaps John took the words out of my mouth because I keep telling him he is a genius. He has overcome obstacles that other freeze dryers haven't on their UA-cam channels and he has created such fun and interesting things that expand the culinary concepts of freeze drying.

@@JohnInBibs actually FYI, sweet onions aren't really sweeter, you just don't cry as much when you chop them. I like to buy frozen prechopped onions and also a three pepper/onion blend for about a buck a bag at Kroger. It's my backup when I haven't had time to prep for the next load, but I want to keep my FD running! Great video...you are genius man! I needed to buy some Bourbon anyway. My husband gives you thumbs up as well!
I like the pepper and onion frozen mix as well. I have used it in a few of my videos. Problem is walmart doesn't sell them here anymore. I've been told dollar store has them but I haven't found them 😕
I’ll be making these soon. They look great!! Is there any reason why butter couldn’t be added to the crockpot, along with the bourbon? I saw a lady carmelize a huge amount of onions in a roasting pan. She made hers with only 4 sticks of butter in it. Sounds like a lot of butter, but it was a huge roaster, stuffed to the top. Didn’t know if the butter would in any way react with the bourbon and throw off the taste.
John, I noticed you're using these larger molds instead of the smaller ones. I'm trying to decide between the larger mold and the smaller mold for making healthy snacks. I have a large harvest right so filling up 5 trays with balls. What would you do? A bunch of tiny ones or these larger ones?
@@JohnInBibs Thanks! I was hopping you'd say larger was better because those small ones look like a lot of work, and more expensive. But deep down I knew the smaller ones were better. Will be ordering them. Much appreciated.

I used plain yellow onions that come in a 3lb net bag

If you are planning on freeze drying these I would skip the butter. Butter doesn't freeze dry and could go rancid pretty quickly.
do you think you could use Jack Daniels and/or the other flavors like honey ,apple,etc......?

The small ones sounds great. It's a lot of small molds to fill but I am guessing it might be very pleasant to eat

After freeze dry all the alcohol has sublimated with the water. So alcohol free.
i just tried this and it did not work. had them in the freeze dryer for 50 hrs. came out soft, did not use yellow onions used viadila.
Wow, I can't imagine why yours didn't work? It is just blended cooked onions. Did you remove the frozen balls from the mold before you freeze dried?
