- Popular winter food - cornmeal rotis served with steaming hot sarson da saag
MAKKI DI ROTI
Ingredients
2 cups coarse cornmeal
Salt to taste
Pure (desi) ghee to cook
Method
1. Put cornmeal in a bowl, add salt and mix. Add sufficient lukewarm water to a part of the flour and knead.
2. Heat a non-stick tawa. Take a portion of the dough, keep it between two sheets of polythene paper and pat to make a thick roti.
3. Place the roti on the hot tawa and cook on low heat. When it gets cooked through, apply a little pure ghee and cook, turning sides till golden on both sides. Make more rotis similarly.
4. Serve hot with sarson da saag.

Don't use polythene sheet for pressing the rotis, instead baking paper can be used.
