      I've seen them make this at flea market stands. They don't use a bowl at all. They use a tall container like a cocktail shaker and dip the corn in it. Or they have the stuff in a tray and roll the corn in it.

    Kenji, I would like to say you’ve changed my mindset of cooking. Before finding your channel I was was always feeling hectic in the kitchen. I wanted to make sure everything was absolutely perfect in every way. But seeing you relaxed while cooking while also having fantastic food made me realize there’s no reason to go crazy. Just pay attention and do things the right way. Now I feel a lot better while cooking and my dishes are even better…. Thanks👍

      If cooking at home for your family or even for your guests is stressful you’re not doing it right. Food is meant to bring people together. The conversation should be the center piece of the occasion the food is a sidekick/helper.

      That’s always been my approach to cooking-a cold beer (or a joint, whatever your preference), good tunes and a nice, relaxed pace of makin some great food

      I live (for all intents and purposes) in Seattle, and my neighbor below me used to grill all the time. Even with my windows closed, I could smell it, and I wanted it so much. I wanted to lower down a bucket with a ten-spot, and pull it up with some sweet grilled meats.

    Back when I was in high school there was an older man who pushed an old-fashioned ice cream cart up to my school around dismissal time. He didn't have ice cream, though. He sold ears of elote for $1 a piece absolutely slathered in mayo, tajin, and cotija. On the rare occasion I had an extra dollar and got to him before he sold out they were my favorite treat for the walk home.
    Now that I'm grown and on the opposite coast I miss Elote Man! I think I'll make these this weekend to share the nostalgia with my daughter. Thanks for the inspiration!

    Little side tip~ I like to make my mixture and spread it on a sheet pan then roll the corn on it, especially if there’s just a couple I’m doing!

      Yes, there ought to be a better way of applying the coating to the corn. Seems a bit wasteful as demonstrated.

    Mexican here, yes in Mexico it has a lot of names depending on the state you are, the most common ones are Esquites and Elote en Vaso (corn in a glass/cup), also Trolelote is used. Mayonnaise + cheese + something spicy es the most common combination but onions, melted cheese and epazote can be used. And sweet corn is not commonly used but is not a sin to use it.

    My fav is esquites aka granos de elote en vaso. Because you get all that yummy corn juice to mix your mayo and chili powder into.
    Also, it depends on where you are if sweet corn is avail. But it's sooo much better w sweet corn and the salty cheese, lime and mayo! You get all those flavors mixing together🤤

    I ate at Toro recently and it's still there (both the corn and the restaurant). You're right, the corn is now $10, but they serve two per plate.

    I've been making this recipe (from your previous video) a lot this summer and have been loving it. I don't have a grill outside so I have just been cooking it under the broiler and cutting it off the cob and serving as elote en vaso. Thanks for all the great recipes!!!

    Frequented Toro when it first opened and that was my intro to street corn. I'm sure you were back there one of the many times I enjoyed the great food and beverages.

      Here in Austin, it's $3 at the flea market :-) I have to say, though, that they don't use mayonnaise, although that's a good substitute for the other things Kenji named, like queso fresco.

    Corn holders help to keep mayo off fingers... One per ear will work.
    "Rolling" two ears at a time in a shallow container of the mayo mix helps to maintain an equal coating on both ears....
    Hard for me to describe in words, but essentially, the bigger the gap between the "rolling ears" , the thicker the coating on each cob will get....
    As in, if the ears are touching each other, they get the thinnest layer of mayo... Increase the gap, and scallions will be attached/included .

    If you are an apartment dweller who does not have access to a grill, but craves these tasty flavors - I have made a cheap elotes knockoff in my apartment kitchens for years. Just put a tiny amount of butter or oil in a hot pan, and toast frozen corn kernels in it until they're golden and slightly crisp. Then add the referenced toppings to the corn in a bowl. It's excellent.

    I'm one of those people that has a thing with mayo, I've done elotes with the sour cream before and it was nice but my favorite was actually doing it with some unflavored yogurt.

    I make mine with 2 parts mayo, 1 part sour cream/crema, and 1 part softened butter. Also cotija cheese. Or parm really changes the taste more than I thought it would.

    Kenji- this recipe rocks. My wife and I are addicted to this either on the cob or cooked in a pan. Curiously we sampled it from street carts in Mexico but was disappointed in the corn used not as tasty as sweet corn in the states😊

    I would love a Mediterranean take on this with labneh, sumac, aleppo pepper, parsley, and maybe a little dill. There's a classic fried cauliflower with herbed labneh dish at Zahav in Philadelphia that I think would be really fun to adapt to elotes.

    Im from a mexican and cuban family, and used to run into "the corn man" daily while growing up in Las Vegas, in the Barrio. I'd buy elote for $1 and it's one of my favorite childhood memories. Typically it wasn't sweet corn to answer that question. And I do have to add, *not mayo* but crema, always (mexican table cream) for authenticity.

    Mexican born and raised here. Sweet corn is not commonly used. Generally we use white corn, boiled rather than roasted.

    Traditionally it's the non-sweet corn, but folks in Monterrey have been doing the yellow supersweet varieties, and when served on a cup, they'll sometimes mix the two before going on to a huge selection of toppings, from crumbled doritos to nacho cheese and flaming hot snacks...

    You're missing two key ingredients: a home depot bucket for pre mayonating the corn and a blow torch. You also have to do all of this while riding a bicycle, or in the back of a moving truck.

    Good for the most part. Can't go sour cream if you want an authentic experience. You need some good fatty mayonnaise. This is why it works so well with the sweet corn and lime cutting thru all the mayo cheese and chili to make it a balanced yet tasty experience

      The crema/mayo is easy to sub with vegan sour cream or mayo, but what would you use for the cotija? I guess you could crumble up some tofu, and mix it with nutritional yeast and miso paste for the funky fermented notes.

    Mmmm my sister and I have been making elote a ton this summer! I think it’s good with a little bit of sour cream mixed in and scallions optional since we never seem to have it in our fridge, also if you don’t really like eating the corn on the cob cutting off the kernels and tossing it in the sauce is also great I think, although grilling it is definitely the way to go since canned corn doesn’t really taste the same

    A bit unrelated, but have you tried those portable induction burners that are wok shaped? I'm really not into gas stoves but the way you show wok cooking makes me want to incorporate it in my cooking. Those burners seem like a good option but I don't know how well they work

    I always use Kewpie mayo for my mayo on elotes. It adds a sweetness that compliments the corn and cotija cheese very well.

    There used to be a place in nyc, I want to say down on mott street or somewhere near there. We just called it Cuban corn. This was late 90s. It was pretty much the same recipe as this I think … I hope. Cuz I’ve really missed that corn.

    I'm getting street corn here in south Mexico but it's devoid of taste, juice and sweetness, I dont get what the fuss is about. Back home in Europe for boiled or grilled maize/corn we juicy and sweet cobs. Is that the GMO stuff that I'm not getting down here locally?

    Sweet corn is not normally used but I think it's better, sweet and salty. Esquites with a shit ton of butter, cotija cheese, and Trader Joe's chile lime seasoning, best snack on a cold Oregon day.
