Your original Ciabatta video was the first time I tried bread and completely fell in love with the process. Then I learned how to do Sourdough Bread and English Muffins.
It's been a long way since then and now I have my own home bakery. Today I got a big order and I'm going to be doing this recipe.

Hi John - I am an experienced sourdough baker, but usually work no more than 75% hydration. I recently starting experimenting with ciabatta bread at 80% hydration. I have turned out some proper ciabatta rolls but have not been happy with my shaping and size. This video showed some different ways to handle and shape the wet dough. I feel I my be getting over the next hurdle in my sourdough journey! Thank you!

John, as I said two years ago here below, this is a fantastic recipe and it remains one of my favorite breads ever.
I have one suggestion, if I may. I don't like the white, almost raw-looking bottom in contrast to the wonderful, caramelized top. So, now I preheat my stone to 475* F (246 C) for an hour or so before baking and then lower the temp to the suggested 450* (232 C) and it comes out wonderful.

just saw your older ciabatta bread video from 2017 and was so happy to see you still active! Making sourdough starter was the thing that brought me to breadmaking in the first place, as I thought to myself one day: people used to do that since ancient times, can't be that hard! And boy was I right and wrong in equal parts. Making the starter: fairly simple. making good bread with it, not so much. But as I said in my coment on the older video, I learned a lot, or rather, understood where I went wrong thanks to you. Now, onward to this video!

I'm so jazzed! This bread was awesome! It was my first time working with sourdough, and the first time I have ever tried making ciabatta. Chef Kirkwood was so well spoken and did such a great job demonstrating the technique, that I was able to replicate the recipe so successfully. I began my sourdough starter 2 weeks ago (using a different recipe, with a slightly different ratio of hydration, as I had not yet discovered chef Kirkwood's video and web page). I initiated the starter using white whole wheat flour and rye flour, which I later on fed with all-purpose flour, as my supply of bread flour is limited. Since the coronavirus pandemic started, it has been almost impossible to purchase ANY kind of flour in the U.S. Luckily, a friend gave me some of his bread flour, which I used in chef Kirkwood's recipe. The only thing I did differently was I used a very small amount of finely ground semolina rimacinata flour. The texture of this bread was so light and airy, and the sourdough flavor was incredibly delicate and mild. I will definitely be trying some of his other recipes!

Happily retired now, I can once again play with food and exercise my creativity. @@JohnKirkwoodProFoodHomemade Well, I made my foolish last night (I'm in Canada so at this writing it's 10:09 a.m.) and proceeded this morning to complete the steps. But now I've realized I have an appointment I cannot change that will interfere with the process after the 3-4 hr bulk fermentation. Can I retard the process a bit by putting the dough into the fridge and then finish it when I return home?
Don't worry Susan, it'll be fine just sitting there until you're ready, I've left mine for 24 hours before and it's been alright,

Just a little extra info to help you along with these ciabatta loaves. Please follow these 4 simple rules when making these.
Please post me a comment if you need any more help.
1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
2. Use digital SCALES for the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate.
3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here ua-cam.com/video/HWpSbYV96_c/v-deo.html

Dear John thank you for answering all questions. I have been following your instructions closely 'have used good flour 'and my starter ferments well .how ever i still wish the bread to be lighter in said.
If you have have followed the recipe closely your bread should be the same as mine, double check your quantities, do not use cups or measuring jugs, use scales even for the water.
The one person that gave this video a thumbs down has no teeth and is disappointed they will never get to taste this amazing bread.

Hi John, I just made this recipe but divided it into four. Comes out of the oven in about five minutes but when I rotated them they looked wonderful. Sadly I realize my oven is not keeping the right temperature so this little recipe may end up costing me a fortune as I love to bake and will probably need a new oven. Made a small donation. My husband has been begging me to figure out how to make Ciabatta bread like those in Panera Bread (a restaurant in the US), and I finally made it by following your instruction. I've GOT to get a sourdough starter going. Here in the USA, mostly we have dry Fleishman Dry Yeast packets. It works fine for every-day bread, but I'm sure that Your Starter is far superior. Thanks, John! Brian Maday...

John, your cheese chives was excellent, gone in 2 days. Today try my luck with Sourdough Ciabatta. it is delicious with oil and balsamic, but did not turn out exactly like yours. Dough was softer than yours when shaping. Crust is light and chewy but not as crusty, the large crumbs are mostly on the top half, bottom half are smaller crumbs. I was using convection oven 425F with fan, after 20 mins I see bottom is not as brown, so I cover loosely with parchment paper and lower to 410F and removed the water. Thanks for giving me some pointers
Turn up the heat, your oven may be running cooler than mine, also make sure it is preheated for at least 10 minutes before adding the bread.

Thank you for a great and easy recipe for Sourdough Ciabatta. I have baked a few different recipes but yours is easy to follow and very explanatory. I teach sourdough classes at an adult learning centre, and I am about to launch an "advanced sourdough" class for high hydration doughs. I will be useing your recipe with just a couple of minor tweaks to suit a class environment. I always promote your site and channel to my students, along with a couple of others I find very useful for beginning bakers. I am about to sign up on your Patreon page in recognition.

PRANAV CHIGULLAPALLI I started making sourdough breads at home two years ago. It took a while to get it right but once I did I no longer eat any other kind of bread. It has literally changed my life!! My gut loves it! Instant yeast should be banned😂

Just a little extra information to help you along if you do try these baguettes. Please follow these 3 simple rules when making these baguettes. Give me a comment if you need any more help.
1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
2. Use digital SCALES for the measurements including the water, don't convert to cups or measuring jugs, they are too inaccurate.
3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.

Hi John. Blueberry - pancakes have met approvel from all kids (and adults, who tried them). The only question was: „When do you make them again?“ 😊 But next will be the ciabatta. A large bowl with Greek Salad and sourdough cabiatta is just a perfect lunch in this hot weather. So, your sourdough starter pack worked very well and is busy, to produce more sourdough. 😊

Hi John, really enjoy your videos. You obviously a very accomplished baker. John, I normally use cast iron pan, crueset type, to eliminate the need for water tray. However, can only bake one at once. How long can I leave the proved dough out without risking an over proofing ? Many thanks,.

Hi John thanks for the fantastic recipes. I made your rye bread the other day and it was a huge hit. A question about this recipe. If making without a mixer, as per the other ciabatta recipe, I mix the dough and allow it to rest at room temperature for 3 hours, which brings me to the same point as you transferring dough from the mixer to the oiled bowl. So now, do I wait ANOTHER hour to do the first fold, or do it immediately? Thanks again for a fantastic channel. I've learned so much. Karen in Johannesburg, South Africa. (PS we always have to adjust for temperature here - it's mid-winter and we don't have central heating, my home is probably around 16 degrees C, so everything does usually take longer. I try to do rests and proofs in my bedroom with a heater on, or in an oven that was warmed quickly, turned off and has steam to keep the temperature a bit warmer than ambient.)
Hi Karen, I can't honestly say how long each stage takes as you have said it all depends on the temperature you are proofing at, it's all about trial and error I'm afraid.
