You can use any acrylic, though I would use Highly pigmented paints so to use less, as your water-based paints can prevent your resin from curing properly.

They only provide 1 coaster mould. The least they can do is provide 2 moulds like demonstrated so you don't have to wait 48 hrs to make the 2nd coaster.
Any acrylic paint will work so you can use your own stash if you don't like the selection in the kit.

And you're right about the 2 moulds. The extra moulds are quite affordable and would be recommended. Though, as a beginner, it's a good way to "test the waters".
