Wetting your hands inbetween each bun or piece of dough helps a lot without altering the texture of your dough. When I make pizzas at home I very lightly oil the worktop and that makes it so much easier.
Gina, can I just give you a tiny (not sarcastic) tip please? When you’re finished mixing your dough in the mixer, tip it onto your worktop that’s been very lightly oiled and just fold over, quarter turn and repeat another three times (this will not even take a minute), and your dough will handle like a dream. Use a dough divider or the back of a long knife to separate into your rolls, make a ‘cage’ with your hand over the dough and move your hand on the worktop in a circular motion a few times and these bad boys will look so good! After they’ve sat for the 10 mins as per your directions, flatten them slightly before the egg wash. They’ll rise to perfection in the oven and look so good too 🥰 I hope you don’t mind me chipping in my two pence worth 😊

I'm so sad. These turned out beautiful but they were too salty 😢 I wonder if I could have somehow added extra. Hopefully it won't be too bad with everything else.

sourdough is a great option. It's what I primarily use now.
