  • Baked Zucchini Fritters Recipe
    Ingredients
    2 zucchinis, grated
    30 g feta cheese
    A pinch of salt
    1 spring onion, finely chopped
    1 handful fresh dill, chopped
    1 egg
    A pinch of nutmeg
    1 teaspoon baking powder
    Instructions
    Prepare the zucchini:
    Grate the zucchinis and sprinkle with a pinch of salt. Let sit for 10 minutes to release water.
    Place the grated zucchini in a sieve over a bowl. Use your hands or a spoon to press down and squeeze out as much water as possible.
    Mix the ingredients:
    In a large mixing bowl, combine the drained zucchini, crumbled feta cheese, egg, nutmeg, and baking powder.
    Gently fold in the chopped spring onion and dill. Mix well.
    Bake:
    Preheat the oven to 180°C (350°F).
    Line a baking tray with parchment paper or lightly grease it.
    Scoop spoonfuls of the mixture onto the tray, flattening them slightly to form fritters.
    Cook:
    Bake for 15-20 minutes, or until golden brown and slightly crisp around the edges.
    Serve:
    Allow the fritters to cool slightly before serving. Enjoy!
