Korean cucumber Salad side dish/韓式凉拌小黃瓜/오이무침

  • Ingredients:
    5-7 Persian cucumbers (Approximately 1 LB), sliced
    2 Tbsp kosher salt
    2 Tbsp of sugar
    In a bowl, add sliced cucumbers, salt and sugar, mix well to allow the cucumbers to brine for 20-30 minutes.
    Drain and squeeze out excess liquid.
    Seasoning:
    1/2 onion, thinly sliced,
    1 stalk of green onion, chopped
    1 Green and red Jalapenos, chopped
    1 Tbsp of minced garlic,
    2 Tbsp Korean chili flakes or powder
    2-3 Tbsp of sugar
    1 Tbsp of salt
    2-3 Tbsp vinegar,
    1 Tbsp of Tuna fish sauce
    2 Tbsp of sesame oil
    1 Tbsp of toasted sesame seeds
    In a bowl, mix all the seasoning ingredients and set aside.
    Steps:
    In a bowl,
    Mix together the drained cucumber, and the seasoning ingredients. Mix well so the cucumber slices are coated well with seasonings.
    Garnish with more sesame seeds on top, and serve with rice.
