No one ever describes the temperature of what 'hot water' means.
I want to know the recommended temperature of the hot water used.

tea is normally boiled first but think really hot water works fine

It depends on the type of tea, the darker the hotter. Look into gong fu cha tea brewing it’s a whole rabbit hole.
