Nooo why did they remove the second tasting?! That’s my favorite part cus he can discover new things he didn’t taste the first time around and see how it compares to his first attempt.

@@erazn9077 I always assumed someone (test kitchen staff) made it fresh twice, so I think that it is probably to save someone the labor of doing it again mixed with social distancing and timing issues.
They are probably trying not to waste too much food during pandemic

Can someone explain? sorry if I didn't see everything that happened.. but were ppl mad that Brad and Claire got paid more for their "It's Alive" and "Gourmet Makes" series'. And Chris Morocco does these separate video series'. I don't understand, they spent tons of time on all those videos (by themselves). And are some of the most popular vids.. Surely I'm missing something right?
@@MikeWoot65 earlier this year or late last year (i don't remember) some of the pocs quit or went on strike because they felt they weren't getting fairly compared to the non-pocs. (I'm trying to be as objective as possible 😀). Claire and Molly did the same in solidarity.
Now BA just isn't the same and I don't really like Claire's or Sohla's new videos outside of BA.
They should have done a second tasting of the original recipe cus he couldn’t taste the difference and know what to really change
This, and the lifelines should be free, they shouldn't take off the final score. I think that's fair for one day
@@stropheum I don't have a problem with taking off points for the lifeline but he really should get at least two tastings during the day.

but considering he only had one day to recreate the recipe, a second tasting wouldn't be feasible.
Right that’s what I thought.
The fact that he nailed the chef, the dish and the lingonberry made Chris a winner in my eyes. To say he cooked it in cast iron pan instead of on a cast iron grill when he could not see the grill marks was a real stretch for me.
But he did get it; he knew his first version had too much crust, but with only a pan to use he cooked the second batch less. He didn't expect the fowl of requiring a grill pan he didn't have.
Removing the second tasting was dirty. He was already thinking mixed meats, pickle brine, and something else to sweeten with. So with a second tasting he likely would have gotten those. Also in the Test Kitchen he was able to bounce ideas off people, but doing so here reduces his score.
Brad was right, Chris was set up for failure.

To be honest, Swedish meatballs are usually fried in a regular cast iron pan. No grill. Bur now it's Marcus Samuelsson so it's fancy...
He should've got lingonberry no problem. Not getting the grill makes sense to me. In no world would I not fry meatballs first, how are you going to deglaze a grill pan?

Chris constantly devalued his non-white colleagues and made sure the racial discrimination was kept in place.

Give him a chance to REDEEM himself. He had a long break and the format of the show was changed on him. He is a supertaster! and that was a lot of curveballs for 1 episode. I LOVE to see you are continuing this series Chris!
I don't think anybody thinks he did a bad job, that recipe had a LOT of random ingredients that were unexpected if you've never made it before!

@@Sara-dp5dg After the company-wide issues earlier this year, BA's onscreen cast shifted dramatically and a lot of their well known personalities left the company entirely. As far as I can find, Chris and Brad stayed because they need that pay for their families.

Since he's been releasing these with different judges, I still think Brad is the best judge! So sweet, fair and funny. Not to mention that Brad and Chris are the only reason I still watch BA test kitchen sooooo, seems like we need to have more of them together on the channel!
Swede here. What kind of a *monster* cooks meatballs on a grill? Sacrilegious! You do it in a pan and then use the pan to make the brown sauce! (Yes, the actual name for it is brunsås, Swedish for brown sauce)
Maybe the monster who has two restaurants serving this pretty well known Swedish meatball recipe that’s named after him. (Do notice that Chris was able to name the chef for these beauties.) Having made these a few times I’m gonna guess it’s partly so that in a restaurant setting the meatballs hold up well until they’re married to the pan sauce prior to reheating and serving. I don’t put them in sauce prior to freezing them either - the cream sauce doesn’t freeze well.
I honestly (as a swede) think that Chris’ meatballs and sauce looked more accurate. I have never heard of grilling meatballs.
Both Chris and Brad think it's a great idea though. That's what a good chef (Marcus has a lot of accolades) does: take a classic and try to improve/reinvent it.

@@ascillor234 doesn’t make any sense though. In a skittle you get far more surface area and browning which is what you want. What you also do is then construct your pan sauce (which in Marcus’s was lacking in a few places).
As a Swede I’m pretty dissatisfied with Marcus’s recipe. He also left out allspice which is the main source of flavour in a meatball.
@@carl-oscarkallstrom3850 *shrugs* I'm not a chef. I'm just going by what Brad and Chris are saying. Whenever chefs create fusion/experimental versions of classic dishes, it can either be 'genius' or 'blasphemy' but we can't really judge until we actually try it out and taste it.
@@ascillor234 i mean it’s not rocket science. More surface area = more flavour, and a pan sauce will always have those flavour in them. Missing in crucial spices as well. They’re also not going to criticise their own colleague’s recipe
In his defence, as a Swede...I do not know anyone in Sweden who uses red onion in swedish meatballs and grilling them. Yellow onion and normal frying pan is that what everyone uses...

Older meatloaf recipes in the US call for an even mix of ground beef, pork, and veal
And if I bought all that, at minimum I'd have enough meat around for 6 meat loafs.
@@recoil53 my local grocery store sells the mix like that! We buy a pound of ground beef, pork, and veal... they just label it as “meatloaf/meatball mix”

I can buy meat mixes in my markets. It makes a difference in meatloaf too.
It's insane to me that he frequently guesses the chef that made the dish as well... love this series!
In chris's defence of the meat-mix, "mixed mince" is something tht's just as available as any separate mince in Sweden, so it's really common here as opposed to in the states it seems like.
Same in Germany. Actually half and half pork/beef is most common; supposedly cos the higher fat content in the minced pork helps the „dry“ beef mince. although I can also find 100% ground beef. But any other 100% is not so easy to find.
Stores used to sell meat loaf mix with three ground meats in a package (not mixed together). They stopped a while ago.
With just ground beef, you have to know the fat content. It's really non-informative to say "ground beef".
In the UK it isn't common to find mixed mince. I think I've seen a pork and beef mix once but can't remember where.
Interestingly though supermarkets here sell beef mince at 5%, 12% and 20% fat (you may even be able to find 15% fat aswell).

Ahem. Speaking as a swede - it's not the traditional "swedish" version. It's Marcus Samuelsson's personal take on swedish meatballs. Traditionally we only use ground beef, salt and pepper, breadcrumbs soaked in milk, an egg and chopped or minced yellow onions in the meatballs. No honey. And we fry them in butter in a frying pan - no grill. So, Chris actually went above and beyond the challenge. He deserves an A. :-)
Yeah, honey and red onions in meatballs is why we sent Marcus across the Atlantic in the first place.

YAAAAAAAYYYYYY!!!! FINALLY, classic BA is back (do start to think of concepts for your new staff. It’s hard to sing and dance in front of the camera without being given a theme - they will do better if you give them that)
Yeah, the thing that feels like it's been missing is the "fun" element with the new people; I'm happy to learn about their culture or personal cooking philosophies, but the thing that was great about the old cast was how much fun they seemed to be having or that the editors had kind of at their expense.
@@fairygirl626 That's it--the fun! It was the most "buddies having fun in the kitchen" cooking show I've ever watched. The editing was the icing on the cake. This is coming close. If they can start interacting again and getting to know the new folks when safe, it might make it. But they will never have the same chemistry. It is a lesson to learn--it's a shame they couldn't do it in time before folks left. They are real people, and I will continue to watch them wherever they are.

Brad would be the kind of teacher who realized that boost of confidence is more important than an exact grade. On the other hand I would have expected Chris to regect it and demand his exact grade! 😂

I miss the old Bob Appetit. We know there were problems that had to be addressed, but I wish you could have just addressed them directly rather than letting it blow up in public and then having to reconstruct the entire channel. It's a real shame.
To recreate the Reverse Engineering with Chris lights up my day. Brad, as always adds much to it too. I do miss the background of the test kitchen. So nice to see Morocco again though.

I can't really look at Chris in the same way after hearing about his role in the BA scandal and his infamous 'Sohla problem' that he somehow had it in his head that someone as overqualified, experienced, skilled, entertaining, undervalued, and underpaid as Sohla moving up a little was 'too fast'.
100% agree...actually that’s how I’m feeling about this channel and the whole cast...
Give me a break, Sohla blew up the entire channel because she wanted a promotion in pay before she got promoted to an on-camera talent position with her own show. There's nothing wrong with having her earn her stripes as a test kitchen recipe developer, appropriately paid for that level, before giving her a full show.
If she hadn't thrown a hissy fit and called in the social justice mob to harass them she would have earned the upgrade on her own within a year. Instead she cost a lot of good people their jobs so she could take her newfound fame and move elsewhere. Greedy, short sighted and selfish.
So glad to see another episode of this series. Well done.
