    How is stretching the top side is easier than the bottom side !! there shall be now difference!! I disagree with you completely on the fact that when you stretch from one side different than the other because technically both sides are going to stretching by the same amount. This video is misleading. Know your facts.

    I'm pretty sure I've mistakenly put the bottom on top more than once but never suffered any consequences. This is a pretty good explanation why. LOL!

    Not much of a difference to spot. I would say it's a personal preference. The only thing which is the gluten network bends up when the top part stays top. If it's upside down, then edges want to come up because of the gluten direction. The difference as said is not noticeable. The taste will also be the same...

    They both looked epic and I would eat them all. Aesthetically the bottom one looked the best to my eyes.

    I couldn't really tell the difference other than the bottom side up browned more evenly. I've always been puzzled as to why Vito always wants the top on top when finished stretching.

      After making homemade pizza dough for 10 months, I still can't tell the difference. Once into stretching and flipping, I most always forget which is top and which is the bottom!! @@renestrgar

      @@JonathanOvnat He's a great entertainer and I've learned everything I know from him. I make better pizzas than I've ever been served so he's a plenty good enough teacher.

    It is standard for all bread making that the top stays on top. Pizza is no different. Richard Bertinet is a master. Watch his videos making baguettes to get a feel for what must be done for pizza dough.

      Not the standard for pizza :) You can do it how you like it.
