I’m having trouble finding a few of the parts you mentioned changing out. Specifically looking for front and rear fender hd trim. Also the deluxe trim for front fender.

I wouldn’t get them from Harley. I get all of mine from Impress Plating in California. I’ve used them for years.

Just cut with a jigsaw and lightly sand the edges
What brand are your bars?
EBay 12” Carlini style ape hangers. Not Carlini but have a similar bend, good quality
What size wheeel on back?
