Why do you play a half step down? Doesn't the song use open chords?

Guitar tutors always repeat the start of a lesson over and over again but by the time they get to the end they rush through it which is usually the hardest part. And let's be honest, how many people know what a b flat or c note on a string is. Should be 'Bend third string at the 11th fret' etc
