I've "spatchcocked" a number of whole chickens to put on my smoker. They turn out very well. I did the pig today, smoked a pork butt. I hope that you and yours are doing well.

It turned out real good … love doing chickens on the Napoleon. Does a great job on the skin! No more rubbery skin!
