I don’t know who the hell is calling tamahagane jewel steel, but it’s smelted iron sand, and very impure at that. The entire process of forging a katana is required to make a decent sword out of such awful steel.
Maybe because iron is rare and hard to extract in Japan so it's very valuable, especially in the warring time, when every available piece of iron is needed to made weapons and farming tools, hence the name "tama" (precious).

It can be a quick base for a chowder for an amazing weeknight meal.
