I always appreciate Guga's experimental approach to cooking. Even tried-and-true dishes get boring after awhile. After cooking hundreds of turkeys the traditional way (with great results), I am determined to try something different this year. I have watched many videos of cooks de-boning a whole turkey, but they all roll it up into a cylindrical shape. Only Guga makes it round, resembling a pumpkin or gourd, which is eminently appropriate for the season. The cylindrical rolls put some (much) of the skin on the inside of the roll, where it will not get crispy. With all poultry, there is nothing better than crispy skin, and nothing nastier than undercooked flabby skin. Guga's roundish shape seems to maximize outward skin exposure, allowing all the skin to get crispy. For the visual effects, as well as the crispy skin ratio, I will attempt to replicate Guga's presentation. Since I think most discerning diners prefer dark meat, I am also contemplating stuffing my bird with a couple extra de-boned turkey legs or thighs, thus ensuring a higher ratio of dark meat.
i'm thinking i might start small and try this with a turkey breast first...still haven't tried spatchcocking a chicken yet, never even crossed my mind to debone an entire turkey!

nice job ! to make a crazy gravy you can roast the bones with veggies on the grill and then throw all that stuff in a big pot , deglace with burbon and ad some chicken stock. let simmer a few hours and pass through a sieve. then you can let it reduce slowly until it has thickened
My dad made a turkey for our family when we went up to Dallas for thanksgiving (my part of the family is the cooks of the family, including me) and it was amazing. It started to fall apart when he took it out of the wood smoker and he injected it with butter every-so-often and it was so juicy and tender. Hands down the best turkey i’ve ever had. Mmmm 😋

Guga u treat the meat delicately . Slow and careful movement, clean work surface. Scott rea, an original favorite of mine too, alchemy type of cooking, unreal . Men and meat is a super combination.

Next Thanksgiving Try a Smoked fried turkey. Wet Brine the Turkey over night. Rub it down with Cajun seasoning. Smoke the Turkey to 155 F then place it in the frier for about 10 to 15 minutes to get it up to 165 F-170 F. You get a juicy/Smokey meat with a dark golden brown/crunchy skin. It’s amazing.
This was super-interesting. I’m definitely going to try tying my turkey like that, soon. Also the stuffing - diced potato and bacon - sounds deeee-licious!!
As a life long carnivore I can honestly say I prefer a nicely cooked turkey over most other meats. I'm a big time poultry fan. This turkey looked amazing.
A mixture of garlic mashed potatoes and crispy fried bacon for the stuffing, pour gravy on top after slicing a piece. Great video Guga Turkey challenge!!!!
It would still get moist and humid and soggy anyways inside a steaming hot turkey, would still be mush-like but greasier. Drizzle of olive oil might add something extra, but the bacon would release some grease and flavor in itself.

you guys always use regular brush, meanwhile Gordon Ramsay always use some kind of herb brush. Sometimes I wonder if it actually make differences, because it's just used as a brush, seems like a waste of herbs. But, there's no way Gordon Ramsay did something useless like that. Can you guys test the herb brush?
Fortunately in Australia are not big on Turkey, I think we tried it once for Christmas (We don't have thanks giving) Most years we have Pork and Chicken roasts or Lamb. This for Turkey though looks pretty awesome, thanks for all the effort Guga :D
Good technique for turducken as well. That concept can go in so many interesting directions. With pork belly, quail, lamb, etc. We've made the same old overcooked, dried out turkey for years, and have just served it with 2 gallons of gravy. Looking for something new, and I definitely want to try that. Nice job. Peace Brother.
In Germany we don't have so much turkey but rather goose. Traditionally we cook the goose for 12-16 hours in the oven - which should not be too different from traditionally cooked turkey. This year I will try out making it sous vide. Maybe you make a video on goose as well?! I would love to see how you approach the challenge of cooking goose.
Sometimes simplicity is mastery. Cut turkey in half, bake, switch turkey halves from top rack to bottom half way through. Eat moist crispy turkey all year. Cooks fast.

Afcourse it makes no difrence 😂 silicon is more easy to clean tho.

Don't "mash" the potatoes before putting them in, just boil the pieces a LITTLE bit before putting them in the turkey.
