  • Our Brew With Us series has always been dedicated to introducing fresh ideas and techniques to our beloved community of home brewers. The joy of inspiring you to embrace novel approaches, experiment with uncharted recipes, and venture into new styles is immeasurable. The ultimate reward comes from hearing about your experiences and the feedback you share about these recipes - it truly makes the journey worthwhile.
In our most recent collaboration, we aimed to take this ethos to greater heights, focusing on beer styles that can appear incredibly daunting: mixed fermentation and Saisons.
Breaking down this barrier was our goal, rooted in bolstering confidence. With this in mind, we reached out to what we consider the epitome of these styles in the UK: Burning Sky.
Nestled in the serene East Sussex countryside, beneath the shadow of the South Downs, Burning Sky is a true Saison and Mixed Fermentation Brewing and Barrel Aged Beer maestro. Drawing substantial inspiration from Anglo Belgian brewing and armed with a well-established brewing career, founder Mark Tranter sought the freedom to create the beers he envisioned, in an environment that fuelled his passion.
The first instalment of our latest series takes Martin and James on a journey to this remarkable brewery and unveiling the inner workings of this unique brew house.

This is absolutely brilliant! I was lucky enough to have a friend bring a few Burning Sky beers over to Thailand for me, and I was blown away. Mixed-ferm Saisons are one of my favourite beers to brew, so I can't wait.

Lovely vid guys and excited to compare the Provision recipe to the one in the Euan Ferguson book. And this will now put a stop to me collecting the yeast from their bottles 🤣🍻

Probably your best road trip video. Don't know why, but it just empathise with what was going on. Look forward to part deaux, and trying the recipe.
Given its East Sussex, is it a chalky base water?

The beers sound fantastic! Thanks for sharing this! Do you know why they use both cork and cap? Does it add anything to the aging of the beer, allow the bottle to rest on its side without interacting with the cap or is it just traditional (for some breweries)?

Glad you enjoyed the video. The cork needs to be held in place in all sparkling products really, belt and braces. Many Belgian beers will use corks with a cage, similar to sparkling wines and this replicates that method
